I bring you some bites that are as easy to prepare as they are fun: these are honey and vanilla biscuits in the shape of Easter bunnies . They are perfect for decorating the cake with edible figures, or for serving individually with coffee, for breakfast or as a snack.

These are cakes that you can decorate by adding different touches that will make them special, or you can make them without any additions, which, although they won't be as attractive, will be just as delicious. They are delicious! They have a very rich vanilla aroma and a very spongy texture. Dare to prepare them and they will surely be a success! What do you say, let's get down to work?

Nordic Ware Baby Bunny Mold

Ingredients

  • 175 g baking flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 180 ml of milk
  • 110 gr of honey
  • 1 tsp lemon juice
  • 1 vanilla pod, seeds removed
  • 125 gr butter, softened
  • 120 gr of sugar
  • 2 large eggs

Preparation

  1. Preheat the oven to 180ºC. Prepare the Nordic Ware Baby Bunny pan with a little butter and flour or with release spray .
  2. In a medium bowl, mix the flour, baking powder and salt. Set aside.
  3. In another bowl, mix the milk, honey, lemon juice and vanilla seeds and set aside.
  4. In a mixer, such as a KitchenAid, mix the butter and sugar until combined. Then add the eggs and mix well again until everything is uniform.
  5. Add half of the flour mixture, then half of the milk mixture and mix well before adding the other two halves.
  6. Continue beating until you obtain a uniform batter, then pour it into each cavity of the previously greased mold.
  7. Tap the bottom of the pan lightly to help remove any air bubbles from the dough and make them rise to the surface.
  8. Bake for approximately 25-30 minutes or until a toothpick inserted into the center of the middle bunny comes out clean, meaning the dough is cooked. You can also use the Nordic Ware thermometer , which will quickly and visually tell you if your cakes are ready.
  9. Let cool for about 10 minutes before inverting the bunnies onto a cooling rack.

For the icing (optional):

50 gr softened cream cheese
100 gr softened butter
200 gr powdered sugar
2 tbsp milk
1 tbsp vanilla extract

  • For frosting, mix cream cheese and butter together and microwave until very soft, 10 to 20 seconds. Stir to combine. Add vanilla and powdered sugar, stirring until smooth and combined. Use milk to thin frosting to desired consistency for frosting cakes or decorating desired parts. Serve immediately or refrigerate until serving time.
