I bring you some snacks that are as easy to prepare as they are fun: they are honey and vanilla cupcakes in the shape of Easter bunnies . They are perfect to decorate the cake with edible figurines, or to serve individually with coffee, for breakfast or as a snack.

They are some cakes that you can decorate by adding different touches that will make them special as you can do without additives, which although they will not be as showy, they will be just as delicious. Nordic Ware Baby Bunny Mold

Ingredients

  • 175 g pastry flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 180ml milk
  • 110 grams of honey
  • 1 tsp lemon juice
  • 1 vanilla bean, seeded
  • 125g butter, softened
  • 120 grams of sugar
  • 2 large eggs

Preparation

  1. Preheat the oven to 180ºC. Prepare the Nordic Ware Baby Bunny mold with a little butter and flour or with release spray .
  2. In a medium bowl, mix the flour, yeast, and salt. book it.
  3. In another bowl, mix the milk, honey, lemon juice and vanilla seeds and set aside.
  4. In a mixer, such as a KitchenAid, mix until the butter and sugar are incorporated. Then add the eggs and mix well again until everything is smooth.
  5. Add half of the flour mixture and then half of the milk mixture and mix well before adding the other two halves.
  6. Keep beating until you get a uniform dough, then pour it into each cavity of the previously greased mold.
  7. Give the bottom of the mold a small blow, to help remove the air bubbles inside the dough, and thus make them rise to the surface.
  8. Bake for approximately 25-30 minutes or until a toothpick inserted into the center of the bunny in the middle comes out clean, this means the dough is already cooked. You can also make use of the Nordic Ware thermometer , which tells you quickly and visually if your biscuits are ready.
  9. Let cool for about 10 minutes before inverting the bunnies onto a cooling rack.

For the glaze (optional):

50 gr softened cream cheese
100 g softened butter
200 gr powdered sugar
2 tablespoons of milk
1 tbsp vanilla extract

  • To glaze, mix cream cheese and butter together and microwave until very smooth, 10 to 20 seconds. Mix to homogenize. Add the vanilla and powdered sugar, stirring until smooth and combined. Use milk to thin the frosting to the desired consistency to cover the cakes or decorate the desired parts. Serve immediately or refrigerate until serving time.
