Cod is without a doubt one of the most versatile fish. You can find it salted and now in almost all supermarkets also at the right level of salt, which means you can decide to have cod almost on the spot.

Today we are going to prepare it with white wine and tomato. We will use cherry tomatoes of different colors that give it a fresh and very appetizing appearance these days when the heat is on.

I have used my Infinity frying pan from Bra. I am a big fan of versatile products that serve you for a lot of things and that you can use in different preparations.

Also, nowadays with small kitchens being common and the resulting lack of space, these pans are an extra help in the kitchen because they have a removable handle, which on one hand allows you to store them stacked without wasting space, and on the other (which I like most) lets you use the pan in the oven as well!

So the same pan works to prepare a delicious cod in white wine like today's, as it allows me to make a brownie or even a tocino de cielo in the oven.

Today we're making this cod that is ready in 20 minutes and looks this appetizing.

BRA Infinity non-stick frying pan and Revol porcelain plates

Ingredients

  • 3 tablespoons extra virgin olive oil
  • 2 garlic cloves
  • 1 teaspoon pimentón de la Vera
  • 600 g cod at the right level of salt
  • 500 g cherry tomatoes
  • 200 ml white wine
  • A pinch of salt
  • Freshly ground black pepper
  • 1 bunch of fresh basil

Preparation

  1. In an Infinity frying pan from Bra, brown the garlic in two tablespoons of extra virgin olive oil. And the smoked paprika. Add the cherry tomatoes cut in half and sauté. Season with salt and pepper and sauté for a couple of minutes.
  2. Transfer to a Revol plate and in the same pan, heat a tablespoon of oil. Brown the cod on both sides starting with the skin side up.
  3. When it is seared, add the white wine and when it has boiled, return the cherry tomatoes to the pan. Let them finish cooking (5 minutes) and finish by sprinkling a little fresh basil. Serve with the tomatoes and enjoy the summer!
