The blue cheese quiche is one of those recipes you always crave: creamy, flavorful, and very easy to make. A perfect option for either a quick weekday meal or a more special dinner, thanks to that bold touch the blue cheese adds.
This time, we made it in a Cristel stainless steel pan, ideal for working precisely and taking the recipe straight from the stove to the oven. A practical way to make a well-cooked quiche, with an even base and a smooth, balanced filling.
A classic French-inspired recipe, simple, but with that elegant touch that never fails.

Ingredients
- 1 shortcrust pastry
- 200 g blue cheese
- 3 eggs
- 200 ml heavy cream
- 100 ml milk
- salt and pepper
- 2 sprigs thyme
Preparation
- Preheat the oven to 180 ºC.
- Start by crumbling the blue cheese in a bowl with a fork.
- Add the milk little by little while mixing, until well combined.
- Add the eggs and then the heavy cream, and mix until smooth and creamy.
- Taste the mixture and adjust the salt and pepper if needed.
- Place the shortcrust pastry directly in a 26 cm stainless steel pan (we used the Cristel Casteline stainless steel pan with a removable handle and oven-safe), pressing it well into the base and sides.
- Pour the mixture over the pastry and scatter the thyme on top.
- Put the pan in the oven (and remove the Casteline removable handle) and bake for about 30 minutes, until the quiche is set and lightly golden.
- Serve warm right away, or let it cool and serve it cold. It is delicious either way!
