Here is another recipe that Stéphane Poussardin (L'Atelier d'Stéphane) has made in our showroom, We Love Cooking. It is a very easy and original appetizer that can be cooked with our Le Creuset grill and a Kobra mandolin from De Buyer or Gefu ceramics .
Ingredients for 4 people:
• 1/2 red apple
• 1 tbsp honey
• Sesame oil
• Water
• Toasted sesame
For the cannelloni:
• 1 Zucchini
• 250 gr. French goat cheese "President"
• 20 gr. of 35% liquid cream
• 2 tbsp olive oil
• Salt
• Pepper
• Oregano powder
Elaboration:
For the cannelloni: Mix the goat cheese with the cream, oil, oregano, salt and pepper in a bowl. Set aside. Cut the zucchini lengthwise into long slices using a peeler or mandolin. Set aside.
For the honey vinaigrette: Prepare a vinaigrette with the honey, a little water and gradually add the sesame oil using a whisk until you obtain a fine, creamy texture.
Assembling the dish: Heat the grill and sear each slice of zucchini on one side. Spread out the slices of zucchini and form little balls with the mixture on them, roll them up to make a cannelloni shape. Serve the cannelloni hot with the previously diced apple and the honey-sesame vinaigrette.
