Are you someone who eats yogurt frequently? If so, making yogurt at home is the best solution, not only because you choose the ingredients and avoid flavorings, preservatives and the whole slew of additives, but because it couldn't be easier.
You only need milk — in this case it can be cow, sheep, goat or soy — and of course the cultures, which together with the temperature are responsible for the fermentation. You can get the cultures from another prepared yogurt, or even nowadays in sachets at health food stores or pharmacies. The rest is just a matter of imagination.
It's true that there are several ways to make it, but for me the easiest solution is a yogurt maker that you set up and forget because it keeps a constant temperature, giving you the desired consistency, since without a yogurt maker the temperature isn't constant and the texture is lost.

Tefal Multidelices Yogurt Maker
Ingredients (For 6 small jars)
For the lemon curd:
- 200 ml lemon juice (4-5 lemons)
- Zest of 1 lemon
- 60 g rice syrup or honey
- 15 g cornstarch (1 tbsp.)
- 2 size "L" eggs from happy hens
- 1 pinch of salt
For the lemon yogurt:
- 600 ml whole cow's milk or soy milk *
- 25 g (1 tbsp.) powdered milk**
- 1 pot of plain yogurt
- 1 tbsp. sugar
- Peel of one lemon
*You can replace the milk with cream to achieve a Greek-style yogurt
**The powdered milk helps the yogurt gain body because it provides the calcium that milk loses during pasteurization or UHT processes
Preparation
For the lemon curd
- Wash 1 lemon very well and zest the yellow part without taking any of the white. Set aside.
- Squeeze the lemons' juice, strain and mix with the rice syrup. Bring to medium heat and let it dissolve.
- In a bowl beat the eggs well and the lemon zest and mix thoroughly with the cornstarch. I recommend adding the cornstarch gradually to the beaten eggs so it integrates well and doesn't form lumps.
- Once the mixture of eggs, cornstarch and zest is well combined, pour it into the saucepan, raise the heat slightly and stir constantly so the eggs don't curdle. Be careful that the mixture must not reach a boil at any time.
- The mixture will thicken until you get the texture of a light custard. It will thicken more as it cools.
- Once ready, transfer to a glass jar until it cools. Remember to cover the glass jar immediately or press film directly onto the curd so a skin doesn't form on top.
For the lemon yogurt
- Grind the lemon peel with the sugar in a food processor and set aside.
- Mix the milk with the sugar and the ground lemon peel, the powdered milk, and the plain yogurt
- Cover the bottom of each small jar with 2 tablespoons of lemon curd at room temperature or cold.
- Fill the rest of the jar with the milk mixture and repeat with the remaining jars.
- Place the jars without lids into the yogurt maker and cover the yogurt maker with its lid.
- Select Yogurt mode and press Ok.
- Select the time (between 8-10 hours)
- Do not move the yogurt maker under any circumstances or you will disrupt the fermentation process.
- Once the cycle is finished, remove your jars, now put on their lids and refrigerate for 3-4 hours until cooled and ready to eat.
- They keep well for about 4 days.

Tips
- You can flavor your yogurts with whatever flavors you like: vanilla, cocoa, jams... but never use fresh fruit, as it releases water and acid. You can use jams to mix into the milk or, as in this case, place at the bottom.
- If you only want plain yogurt, just mix milk and yogurt and that's it.
- Powdered milk is optional, but it helps give the yogurt more body.
- You can replace the milk with cream to obtain Greek yogurt.
- The longer you let the yogurt ferment the tangier it will be.
