A few days ago we brought you some basic recipes for making waffles. Beatriz, author of To Be Gourmet, has already christened her waffle iron, and brings us a new recipe you will love: some traditional Belgian waffles served with chocolate and mango. How many times will you want to have this for breakfast?

Belgian waffles are truly delicious and it's not easy to find a place that makes them well. When I've seen a waffle stand, especially in France, I've immediately rushed to buy them, swept away by the pleasant aroma they give off.

Now that I have the gofrera de Nordic Ware I can make them at home all winter. Well, right away! With this recipe they turn out delicious, and once you have the batter they couldn't be easier to make. Who's in?

Ingredients (for 8 waffles)

  • 100ml of milk
  • 10gr of fresh yeast
  • 250gr of flour
  • 1 egg
  • 150gr of softened butter
  • 1 tablespoon of vanilla extract
  • 20gr of brown sugar
  • 15gr of white sugar
  • 125gr of pearl sugar
  • 1 mango
  • 200gr of 70% chocolate

Preparation

  1. In the bowl of the KitchenAid we put the milk at room temperature and add the yeast. With a silicone spoon we stir until it dissolves.
  2. We add the flour, the egg, the brown sugar and the white sugar and beat at speed 4 (medium/high) until everything is well combined.
  3. We add the soft butter and beat again until we obtain a smooth, uniform dough.
  4. We cover the KitchenAid bowl with plastic wrap and let it rest for a couple of hours in a place away from drafts.
  5. We uncover and add the pearl sugar.
  6. With the help of a silicone spatula we mix well.
  7. We let it rest for another half hour.
  8. We place portions of batter on the sections of the waffle iron, we can use them all at once or only some.
  9. We close the waffle iron and place it on the heat or the ceramic hob at medium temperature.
  10. The waffles cook in four to five minutes. During this time we have to keep turning the waffle iron so they cook on both sides.
  11. It is important to open it to check how it is going and to make sure they don't burn. During the first minute it's better not to, since the batter is still very soft; then each time it's turned (3 or 4 times) it's advisable to check how they are to control the browning we want.
  12. We wash the mango well and with a mandoline we make thin slices, the shape doesn't matter; just what the fruit allows as you avoid the stone. Set aside on a plate.
  13. In a glass we melt the chocolate in the microwave taking care not to burn it; it's better to add squares little by little until we have the full amount
  14. Pour a little chocolate over the waffles and garnish with the mango.

If you want perfectly square waffles, spread the batter a little with your fingers toward the sides once placed. If on the other hand you prefer a more irregular look you don't need to do this; they will be trimmed on the sides like the ones from street vendors and that also has its charm.

He hecho la receta y me ha encantado, la mejor que he probado hasta ahora. Tan solo reduciría la cantidad de azúcar a la masa para que no quedasen tan dulces.
