I bring you a real treat… Quick, light and vegetarian! It's the Poke Bowl, a little-known recipe, but one that I love to prepare. It's an easy recipe to make that's ideal for going back to work and for lunchbox meals , although you'll also enjoy it at a thousand and one lunches and dinners at home. You'll see that making it takes very little time, which is appreciated during the week, and its ingredients are also very healthy.

This is a vegetarian Poke Bowl. If you haven't tried this Hawaiian dish yet, you can't miss it! “Poke” means “to cut” in Hawaiian, and this is the main trick of this recipe. Most of the ingredients used are fresh, so you won't need to cook them. Easy, right? Well, let's get to it, I'm more than sure you're going to love it!

Ingredients

  • White rice
  • Smoked tofu
  • Avocado
  • Mango
  • Carrot
  • Cucumber
  • Cherry tomatoes
  • Hard boiled egg
  • Sesame seeds
  • La Tourangelle Thai Wok Oil
  • Salt
  • Oil and a bay leaf to boil the rice (optional)

    Preparation

    1. First, boil the white rice. You can do this for 13 minutes in boiling water in a traditional pot (with a spoonful of salt, a splash of oil and a bay leaf for flavour). You can also use the Cocotte Every , specially designed for cooking perfect rice using the traditional method (thanks to its ceramic inner lid).
    2. Remove from heat, strain and run under cold water to cool, remove any starch and create a warm, loose rice, perfect for salads.
    3. Prepare the hard-boiled egg by cooking it for 10 minutes in boiling salted water in a saucepan.
    4. Pass the tofu through the grill or pan (turn and turn).
    5. Cut the rest of the ingredients into slices and cubes, using a mandolin if you want to make thin, even slices or with a sharp knife.
    6. You can now assemble your Poke Bowl in your favourite bowl - I used the No.W bowl from Revol , I love it! Start by adding the ingredients, starting with a base of rice, and then place the rest of the ingredients on top (vegetables, fruit and the peeled and chopped hard-boiled egg).
    7. Add a good splash of wok oil or soy sauce, a little salt and you're ready to enjoy your lunch or dinner.

    Grades

    • You can vary the ingredients to your liking: you can modify these to add raw mushrooms, apple, zucchini, onion... Also nuts such as cashews, hazelnuts, pecans...
    • You can make your poke bowl non-vegetarian. You can make it with sautéed salmon, grilled tuna tacos... The important thing is to add the ingredients you like every day so that you can enjoy your meal.
    • For the dice, you can use the Gefu Treppo mandolin , it is fabulous for this purpose and you can cut it into cubes in the blink of an eye.
    • When serving, you can present the bowl with the sauce on the side or you can present it with the sauce on the side.
