I bring you an authentic delight... Quick, light and vegetarian! It is about the Poke Bowl, a little known recipe, but one that I love to prepare. It is an easy recipe to prepare that is ideal for going back to work and tupperware meals , although you will also enjoy it in a thousand and one lunches and dinners at home. You will see that making it takes very little time, which is appreciated during the week, and its ingredients are also very healthy.

This is a vegetarian Poke Bowl. If you still don't know this Hawaiian dish , you can't miss it! "Poke" means "to cut" in Hawaiian, and this is the main trick of this recipe. Most of the ingredients used are fresh, so you won't need to cook them. Easy right? Well let's get to it, I'm more than sure you'll love it!

Ingredients

  • White rice
  • smoked tofu
  • Avocado
  • Mango
  • Carrot
  • Cucumber
  • Cherry tomatoes
  • Hard-boiled egg
  • Sesame seeds
  • Thai Wok Oil La Tourangelle
  • Salt
  • Oil and a bay leaf to boil the rice (optional)

Preparation

  1. First you need to boil the white rice. You can do it for 13 minutes in boiling water in a traditional pot (with a tablespoon of salt, a splash of oil and a bay leaf to flavor it). You can also make use of the Cocotte Every , specially designed for cooking perfect rice dishes with the traditional method (thanks to its inner ceramic lid).
  2. Remove from the heat, strain it and run it through cold water to cool it, remove any possible starch and make it a warm and loose rice, perfect for salads.
  3. Prepare the hard-boiled eggs, cooking them for 10 minutes in boiling salted water in a saucepan.
  4. Pass the tofu through the griddle or skillet (round and round).
  5. Cut the rest of the ingredients into slices and cubes, with the help of a mandolin if you want to make thin, even slices or with the help of a sharp knife.
  6. Now you can assemble your Poke Bowl in your favorite bowl -I have used the Revol No.W bowl , I love it! Go introducing the ingredients, starting with a rice base, and then arrange the rest of the ingredients on top (vegetables, fruit and the peeled and cut hard-boiled egg).
  7. Add a good jet of wok oil or soy sauce, a little salt and you can enjoy your lunch or dinner.

Grades

  • You can vary the ingredients to your liking: you can modify them to add raw mushrooms, apple, zucchini, onion... Also nuts such as cashews, hazelnuts, pecans...
  • You can make your non-veg poke bowl. You can do it with sautéed salmon, grilled tuna tacos... The important thing is to add the daily ingredients that you like so that you can enjoy your meal.
  • For the dice, you can help yourself with the Gefu Treppo mandolin , it is fabulous for that purpose and you can cut into cubes in the blink of an eye.
