Benefits of cooking in Copper: Elegance and Efficiency

I believe that whoever owns or acquires a copper piece should be aware of the great item they are getting, if they are not already.

Copper is a material with a long culinary tradition. It offers excellent thermal conductivity, superior to iron and multilayer stainless steel, with an even distribution of heat throughout the utensil. Thanks to perfect heat transmission and the guarantee of a steady temperature, it is an exceptional material for cooking.

I believe that this great efficiency in heat distribution, gentle cooking and temperature control is the greatest benefit of copper pieces, the reason why top chefs or those who enjoy cooking want to have one of these pieces.

They are incredible pieces: De Buyer pieces are made of 90% copper and 10% stainless steel (note the fact, 90% copper, and with a partially artisanal manufacture).     De Buyer copper pieces

    De Buyer mainly offers 2 copper collections: one is suitable for gas, electric plates and vitroceramic (the Inocuivre collection) and the second is also suitable for induction cooktops (Prima Matera collection).

    Both collections have an exceptional composition, which combines 90% copper and 10% 18/10 stainless steel and a high-quality mirror finish. The manual polishing of the copper is done by hand, following an old artisanal tradition, which makes each piece unique. But what differentiates them?

    • The Inocuivre Collection (suitable for gas, electric plates, vitroceramic and oven): These are the traditional and most representative copper pieces of French gastronomy, suitable for all cooktops except induction. This collection is available in two versions:

      • With a classic air, in the purest style of "haute cuisine" French, with golden cast handles and grips riveted.
      • With a more modern air, with French curvature and with cast stainless steel handles and grips also riveted.
    • The Prima Matera Collection (also suitable for Induction): Developed by De Buyer in 2010, it is the first and only line of solid copper cookware on the market suitable for induction cooktops. Its special ferromagnetic stainless steel base allows its use on any heat source, including induction hobs. It is also oven-safe.

    As you will see, the only difference between De Buyer Prima Matera and Inocuivre copper ranges is solely the ability to use Prima Matera pieces on induction, the range specifically designed for it (unique in the world).

       

      From each of these collections we have been able to bring the most commonly requested pieces, such as: the copper frying pan, the saucepan, tall and low pots like roasting pans, the sauté pan or the paella pan... and a few more individual pieces that are often desired by those who love cooking.

      Tips for cooking with copper

      Copper utensils in your kitchen also add a touch of elegance. But you need to know how to use them correctly to get the most out of them and achieve the greatest possible energy savings. Here are some important tips to keep in mind when cooking with copper:

      • Match the flame size to the diameter of the utensil's base diffuser.
      • Always heat copper utensils over low heat (they are great heat conductors; you'll see that very quickly the entire utensil reaches temperature, and this prevents burning).
      • If you need to increase the heat, do so gradually.
      • Never cook with them at more than 3/4 of your cooktop's maximum power.
      • Avoid using the booster or high, fast flames.
      • Do not heat the utensil empty.
      • You can cook with them in the oven, but bear in mind the recommended maximum temperature is 200 - 220 °C.

      Cleaning and maintenance tips for copper

      Copper pieces do not require very special maintenance, they simply need good care.
      In this regard, you do not need to season them before first use, and one of the few things you should be clear about is that you should never wash copper pieces in the dishwasher.
      To be useful to you, here is a summary of the cleaning tips that may interest you:
      • Their stainless steel interior makes cleaning very easy, so you only need to wash by hand with a soft sponge and soap. In case of stuck-on food, soak for a few minutes with water and soap, clean with a sponge or a brush to remove embedded residues, and rinse. Dry well after washing.
      • The copper exterior changes color with exposure to heat. To return it to its usual tone you can use a special copper cleaning paste.
      • If some areas have darkened, for cleaning the exterior of copper pieces you can use a dry cloth with your usual multipurpose spray cleaner. If several days have passed since the dark spots appeared, you can apply a cloth with vinegar, or make a baking soda solution with a little water and apply it with a soft cloth to the copper.
