This Rioja-style skewer of red prawn and mushroom with pesto is an extremely simple and impressive dish, and what I adore is the basil pesto that accompanies it to give it that special touch, because it’s a pesto you’ll use to accompany salads, meats and fish whenever you want something special.

Believe me it will take you very few minutes to make it, and for that te I strongly encourage you to try it -with so little effort but such a delicious result, it will become a classic among your friends and family this summer. We make it in the WMF Lono Master grill pan electric grill this time, thinking of cooking it outdoors, but you can make it in your grill or barbecue.

What I like most about doing it on the Master grill pan is that allows us to cook directly at the table and works very well for lunches or dinners outdoors, obviously ideal at this time of year.

Ingredients

  • 12 large mushrooms, cleaned, whole and stemless
  • 12 large peeled prawns, deveined
  • 1 clove of garlic, peeled
  • 2 bunches of parsley leaves
  • 1/2 glass of extra virgin olive oil
  • Maldon Salt

Preparation

  1. To make the pesto, simply put the garlic, parsley and oil into the container for the WMF chopper and grind everything well for a few seconds by pressing the Power 2 button, and you’ll see that you immediately obtain the pesto.
  2. Prepare the mushrooms by removing the stem, drizzle them with a splash of oil.
  3. Dry the prawns on kitchen paper and oil them as well.
  4. Place in the griddle Lono Master grill pan WMF the mushrooms, let them brown on the bottom side and then on the top. Remove and set aside.
  5. Distribute the prawn tails in the griddle Lono Master grill pan WMF hot and brown on both sides, add the mushrooms again and sauté pouring a couple of tablespoons of the parsley pesto.
  6. Serve immediately by skewering each prawn with its mushroom on a toothpick.

Notes

  • Instead of serving these skewers as an appetizer, you can serve the skewers with a bit of basmati rice, or with vegetables cooked on the same grill, and you'll have a complete, very tasty dish.
