Making popsicles at home is super easy with the Zoku popsicle maker, since it freezes mixtures in 7-8 minutes, so you can enjoy homemade ice cream in record time.

Today Beatriz, author of To Be Gourmet, brings us a very easy recipe that surely all the little ones will enjoy: yogurt and Oreo cookie popsicles. Very tasty and creamy popsicles!

When it comes to ice cream I'm getting picky and I always choose artisanal ones, made with real milk, real fruit and no colorings or additives; I'm the same with popsicles, and since we have the Zoku popsicle maker at home, and this makes two summers already, it's super easy for me.

The best part is that with the kids on vacation at home, they make them themselves, since it's so simple they don't need my help. It's true that the most basic ones are made with juice or yogurts, but my thirteen-year-old daughter is already starting to make designs with little bits of things and she's… happy!

We made these Oreo popsicles together and in return I asked her to pose for you. You're going to love them.

Ingredients

  • 3 sweetened Greek yogurts
  • 50ml of whole milk
  • One package of Oreo cookies

Preparation

  1. Have the ZOKU popsicle maker in the freezer at least 24 hours before making the popsicles (I always keep mine there).
  2. In a bowl, mix the milk with the yogurt and stir.
  3. Break apart some Oreo cookies to get halves to use as decoration (you can't put it in whole because the stick wouldn't fit), and set aside others to make cookie crumbs in a mortar.
  4. To make the Oreo layered popsicle (top photo): pour a little of the yogurt mixture, then sprinkle some Oreo crumbs, add more yogurt and make another layer of chopped cookie, finishing with the yogurt. Insert the stick, wait seven minutes and unmold.
  5. For the popsicle with the Oreo cookie in the center (bottom photo): pour a little yogurt in the bottom, wait 3 minutes so it solidifies a bit, insert the cookie (only one half) sticking it to one side of the mold (with the letters facing backward). Hold it with your finger while you pour the yogurt, release and insert the stick. Finish with a layer of crushed cookie mixed with a bit of yogurt so the mixture freezes. Wait 5 more minutes and unmold.

Notes

You can make more variations based on Oreo cookies:

  • Placing pieces instead of the whole cookie also looks really nice.
  • Or if you feel like putting it whole, another option is to fill the mold with yogurt, insert the stick and add the whole cookie but broken into pieces so it distributes around it without getting in the way.
  • You can also mix the yogurt with Oreo crumbs and stir; it will have a fun speckled appearance.

The Zoku popsicle maker allows you to make very basic and simple popsicles, or let your imagination run wild and create real masterpieces — the limit is yours. That said, you'll always know that however sophisticated they are, all the ingredients are natural and homemade.
