Just because it's an easy recipe doesn't mean you don't need to be prepared for a while: it's a good idea to let the dough rest for a few hours, so keep in mind that you'll need to prepare it the day before you're going to enjoy it. The wait is worth it.

As for how to fill it, that is a matter of taste: with or without tomato, with onion, cheese, chorizo ​​or ham, endives or arugula, raisins and nuts or fruit such as pineapple or pear, olives, anchovies, tuna, peppers, egg... Ingredients

For 8 medium pizzas or 12 mini pizzas.

For the dough:

  • 10 g of yeast
  • 140 ml of warm water
  • A pinch of sea salt
  • A pinch of sugar
  • 1 tbsp olive oil
  • 250 g of flour

Others: Optionally, rosemary and/or sage branches.

Preparation

  1. In a glass with warm water, crumble the yeast and dilute it.
  2. In a bowl, mix the salt, sugar and olive oil with the flour and add the water with the yeast. Mix everything until you obtain a homogeneous paste. Cover or wrap in cling film and leave to rest in the fridge overnight.
  3. The next day, remove the dough from the refrigerator and let it cool for 30 minutes.
  4. Roll out the dough into 8 medium-sized discs or 12 mini pizzas. Heat a large frying pan (I recommend using a non-stick frying pan or the Le Creuset Cast Iron Skillet , brushed with oil), add a little olive oil and place 3-4 pizzas on top. If you like your pizzas with a nice herb flavour, sprinkle some herbs on top of the dough to release their aroma. Cover the pan (you can use the Nordic Ware Smoker Lid ) and let it cook for 3-4 minutes, until golden brown.
  5. Remove the lid, flip them over and cook on the other side for a few minutes. They'll be ready in about 5-7 minutes!

Grades

  • When you flip them, it's a good time to add tomato sauce, cheese, and whatever seasonings you like. That way, the heat of the pan while the second side is cooking will melt the cheese.
  • Also keep in mind that pizza dough without any seasoning other than a few roasted herbs sprinkled on top is an ideal snack, both as an appetizer and to accompany salad dishes, roast meats, fish... Instead of using the popular focaccia, use these flavored pizzas and you will see the success you have.
