This pea purée I'm bringing you today is one of those easy, healthy, quick-to-make, tasty recipes that everyone at home enjoys. As you can see, it ticks all the boxes to earn a permanent spot on your weekly meal plan. It's worth taking advantage of pea season, but if you can’t find fresh ones or want to prepare this dish any time of year, you can use frozen peas.

To show you just how quick it is to prepare a delicious pea purée, there’s nothing like making it in a pressure cooker. This soup, cooked in the Vitavit Premium pressure cooker from Fissler, is ready in the time it takes to set the table and is a great choice for a weekday dinner. You can make it on the spot or have it ready in advance, if you prefer. Let me warn you, the touch of coconut milk makes it almost addictive—so I’m sure once you make it, you’ll be making it again and again.

The fact that you can find frozen peas all year round makes this pea purée a very interesting and healthy option. Still, I recommend taking advantage of the season and buying them fresh at the market—there’s nothing more fun than shelling peas with the family on a Sunday afternoon.

Ingredients

  • 1 onion
  • 1 clove of garlic
  • 1 Italian green pepper
  • 1/2 fresh red chilli
  • 1 tablespoon extra virgin olive oil (EVOO)
  • 600 g fresh or frozen peas
  • 1 litre vegetable stock
  • 1 tin of coconut milk
  • Salt and freshly ground black pepper to taste
  • Juice of half a lemon
  • EVOO and poppy seeds to garnish and serve

Method

  1. Put the EVOO in your Vitavit Premium from Fissler and heat over low heat.
  2. While the oil is heating, clean and roughly chop the onion and green pepper, and slice the half red chilli. Finely chop the garlic clove. Set aside the garlic and a few chilli slices.
  3. Once the oil is hot, increase the heat slightly and add the chopped vegetables. Sauté until golden, then add the chopped garlic. Stir a little to mix with the rest.
  4. Add the peas, the reserved chilli slices and the vegetable stock.
  5. Close the lid on the cooker and increase the heat. Cook at level 3.
  6. When the yellow ring appears, lower the heat (more or less to medium) and wait for the green ring to appear.
  7. Once the green ring appears, cook for 10 minutes (reduce heat slightly if needed).
  8. After 10 minutes, turn off the heat and release the pressure.
  9. Open the cooker and add the coconut milk, lemon juice, salt and pepper.
  10. Blend with your hand blender and serve with a drizzle of EVOO and a few poppy seeds.
