The recipe that Luisa brings us today, from Cocinando con mi Carmela , is a recipe that you will enjoy with the family without taking up much of your time in the kitchen. You love the idea, right? If so, I encourage you to try it, because these mussels with sauce are so good to dip bread in!

As you know, I am passionate about cocottes . It's been three years since my first cocotte arrived at home and since then I have not stopped cooking with it. It is a very versatile pot, once you get the hang of it, it is wonderful. Also, I like to cook slowly, as in the old days, and the stews come out much tastier. But at the same time, it is very fast, for example, when it comes to cooking, since it reaches temperature much sooner than other pots. But now we go with the recipe that I have prepared for you.

At home we really like mussels, they are a classic for some summer dinners or lunches. I can steam them in my cocotte or stew them like in this recipe, which takes less than 20 minutes.

Ingredients

  • 1 kg clean mussels
  • 1 medium onion
  • 3 garlic shoots
  • 250 ml of cooking cream
  • 1 slice of bacon, approximately 100 gr
  • 1 glass of quality white wine
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper

Preparation

  1. Pour the oil into the cocotte and heat carefully, as it heats up very quickly. Add the onion together with the garlic shoots and bacon, all finely chopped, and lower the temperature so they don't burn. Sauté for about 10 minutes, until they turn golden.
  2. When ready, add the mussels, glass of wine and cream. Season with salt and pepper and cook for about 10 minutes with the lid on.
  3. When you lift the lid, you will see that the mussels have opened, but you will have to leave them for a few more minutes so that the sauce absorbs its flavour and they are ready to serve. If any mussels have not opened, remove them.

For an original presentation, in Amsterdam it is very typical to present them with stick-shaped fries.
