La almond plant milk is one of my favorites, and if we turn it into an almond and cashew milk recipe, the truth is it only adds up. It's delicious! This is a milk full of energy and a very pleasant flavor. You'll drink it by the cup! I like it sweet - we use agave syrup and dates to sweeten it. I hope you enjoy this recipe as much as my children do!

Ingredients

  • 75 g raw almonds
  • 75 g raw cashews
  • 800 ml water
  • 1 tsp vanilla paste
  • 1 tbsp agave syrup or 1 or 2 pitted dates
  • (Optional) 1 tsp cinnamon

Preparation

  1. Soak the nuts. Simply place the almonds and cashews in a bowl or jar and cover them completely with water. Leave to soak overnight at room temperature or in the refrigerator for 24 hours.
  2. After the time has passed, drain the almonds and cashews in a colander, and rinse them with fresh tap water for a few seconds.
  3. Put the nuts in the jar of the KitchenAid K400 blender. Add the water, and the dates if you are using them to sweeten. Blend at speed 5 for 1-2 minutes, until you have a liquid, smooth mixture.
  4. Now you must strain the liquid. You can do it in two ways:
    • With a muslin: cover a bowl with a cotton cloth, pour in the blended mixture and close the cloth, lifting and squeezing it until it is completely strained (only nut remnants will remain in the cloth).
    • With the Vegan Milker de Chufamix: transfer the blended mixture to the Chufamix filter, placed inside its bowl. Pass the Chufamix plunger through the filter several times, pressing to release all the liquid and make the most of the nuts' juice.
5. Add the vanilla paste and the agave syrup and mix.
6. Pour the milk into a bottle with a cap and store it in the refrigerator (maximum 4 days).

Notes:

  • We have some ideal bottles for storing your plant milks, I encourage you to check out the airtight Lock Eat bottle with a clip-seal cap, and the bottle with glass stopper Revol.
  • You can also sweeten your plant milk with honey, sugar, stevia... Use the sweetener you prefer.
  • Personally I love to make this almond and cashew plant milk with a teaspoon of cinnamon and use dates to sweeten it.

Realmente esta bebida es deliciosa ;)

Puedes dejar secar la pulpa y usarla en muchas recetas dulces, para bizcochos o galletas, como una estupenda harina de frutos secos, o para añadirla a flanes o cremas, por ejemplo.
