Can you imagine enjoying the flavour of traditional Catalan cream in a homemade and refreshing ice cream ? Well, with the Ninja ice cream maker it's super easy. This Catalan cream ice cream mixes the smooth and rich texture of Catalan cream with the freshness of ice cream, creating an incredible dessert that the whole family will love.

Follow my recipe step by step and you will see how easy it is to prepare this delicious dessert at home. I promise you don't need to be a professional chef to achieve it. Plus, it's a fun and delicious way to surprise everyone with something different.

So put on your apron, get out your Ninja ice cream maker and get ready to enjoy an ice cream that will remind you of the flavors of yesteryear, but with a modern and refreshing twist. You'll be surprised by how delicious it is! Let's go for it!

Ingredients

  • 400 ml whole milk
  • 1 vanilla pod
  • 3 egg yolks
  • 125 g sugar (75 g for the ice cream base + 50 for the caramel)
  • 15g Cornstarch

Preparation

  1. Cut the vanilla pod in half lengthwise and scrape out the seeds.
  2. Pour the milk into a medium saucepan, add the vanilla pod and seeds and bring to a boil over medium heat. When it starts to boil, remove from heat, cover and let infuse for 15 minutes.
  3. Meanwhile, whisk together the egg yolks, 75 g sugar and cornstarch in a medium bowl.
  4. Heat in a saucepan over low heat. When it comes to a boil, use a skimmer to remove the vanilla pod. While whisking, pour the hot milk mixture into the egg yolk mixture.
  5. Pour the mixture into the saucepan and bring to a boil over medium-high heat, whisking constantly until the mixture thickens.
  6. Pour the mixture into a container and place it in an ice bath to cool.
  7. Once it has cooled, cover and let it rest for 24 hours.
  8. The next day, make a caramel mix. Line a baking tray with baking paper. Put 50g of sugar in a small saucepan and cook over a medium heat, without stirring, until the sugar turns into a golden liquid caramel. Pour the hot caramel into the lined tray to cool. Once it has cooled completely, chop the hard caramel into small pieces.
  9. Remove the tub from the freezer and place it into the jar-shaped outer container without the lid. Attach the whisk attachment to the lid of the outer container. Place everything on the base of the Ninja Creami ice cream maker and turn the handle clockwise to raise the platform and lock it into place (until you hear a click).
  10. Select the ICE CREAM program.
  11. Once the processing is finished, use a spoon to make a hole about 4 cm wide that reaches the bottom of the container. Add the caramel pieces into the hole* and process the mixture again using the +EXTRAS program.
  12. *It's okay if it goes over the MAX FILL line.
  13. Once the processing is complete, remove the ice cream from the container and serve immediately.

Serve it with salted caramel on top, or with a scoop of cream or milk custard, I can attest that it is a delicious combination, here is a sample:
