These mascarpone and cherry compote waffles that I bring you today are priceless! They are delicious waffles, with which you will undoubtedly fall in love. I think it's a great way to debut the new heart-shaped waffle iron that we brought from the United States, thanks to Nordci Ware. She is so pretty!

Waffles are an original sweet from Belgium, made with a mixture of milk, flour, butter and egg, and their grace is that apart from being delicious on their own, they are a sweet that allows you to make many different variations in terms of their presentation. .

From accompanying it with sweet ingredients (sugar, honey, jam, chocolate, syrups...) to all kinds of salty or fruit accompaniment , they are the most helpful.

On this occasion we accompany it with cherry compote. I assure you that it is the easiest there is and it is delicious! Go ahead and try it and treat your partner, family... And yourself, because by making these waffles you will have earned it!

Mascarpone waffle recipe

Ingredients

For the cherry compote:

  • 450g sweet cherries, fresh or frozen, pitted and stemmed
  • 200 ml of orange juice
  • 60g sugar
For the waffles:
  • 1 packet of baking yeast
  • 350 ml of lukewarm whole milk
  • 2 tablespoons of sugar
  • 2 beaten eggs
  • 450g of flour
  • 1/2 tsp of salt
  • 100 g melted butter
At your service:
  • What mascarpone cheese to taste

Preparation

For the cherry compote:

  1. Remove the stones from the cherries with the help of the OXO cherry pitter and then put them in a saucepan with the orange juice and sugar.
  2. Cook over medium-low heat uncovered for about 30 minutes, until you see that it has reduced by half.

For the heart-shaped waffles:

  1. Mix the yeast with the milk and sugar in a large bowl until completely dissolved. Let stand for 5 minutes.
  2. Next add the sugar, eggs, flour, butter and salt and mix well until well incorporated. Let the mixture rest in a warm place for 15 minutes to an hour.
  3. Preheat the waffle iron (in our case we used the heart-shaped one, but you can use the Nordic Ware square waffle iron if that's the one you have). It is important that the waffle iron is very hot before adding the mixture.
  4. Spread the waffle iron with a little oil or butter with the help of a brush to cover all the corners.
  5. Add 230 ml of the batter into the waffle iron (it will be one or two ladles approximately, depending on the size of your ladle), and spread it out to cover all 5 cavities.
  6. Cook on one side for 3 to 5 minutes, then flip and cook on the other side until done. You will see that they are golden and puffy when they are done.

For the assembly

  1. Take a waffle and cover it with a dollop of mascarpone and a little cherry jam on top.
  2. If you prefer, you can also make the mascarpone and cherry jam mixture separately and serve it already mixed.

The surprise touch for the table: reserve one of the waffles and sprinkle sugar on top while it is still hot, so that it becomes moist with the steam from the waffle itself (or apply a drop of water to the sugar and mix, before adding it to the waffle Use a skewer and a support with a small vase (I have used the Gefu sugar bowl that always works well for these things), to put the flag waffle on the table (It is an easy and original idea to decorate the table! Valentine's day or make any day a special day, don't you think?).
