These mascarpone and cherry compote waffles that I bring you today are priceless! They are delicious waffles that you will definitely fall in love with. I think it's a great way to debut the new heart-shaped waffle maker that we brought from the United States, from Nordci Ware. It's so pretty!

Waffles are a sweet treat originally from Belgium, made with a dough of milk, flour, butter and egg. Their beauty is that, apart from being delicious on their own, they are a dessert that allows you to make many different variations in terms of its presentation.

From accompanying it with sweet ingredients (sugar, honey, jam, chocolate, syrups...) to all kinds of salty accompaniments or fruits , they are very useful.

This time we're serving it with cherry compote. I assure you that it's the easiest thing there is and it's delicious! Go ahead and try it and treat your partner, family... and yourself, because by making these waffles you'll have earned it!

Waffles with mascarpone recipe

Ingredients

For the cherry compote:

  • 450 g sweet cherries, fresh or frozen, pitted and stemmed
  • 200 ml of orange juice
  • 60 g of sugar
For the waffles:
  • 1 sachet of baking yeast
  • 350 ml warm whole milk
  • 2 tbsp sugar
  • 2 beaten eggs
  • 450 g of flour
  • 1/2 tsp salt
  • 100 g melted butter
To serve:
  • Mascarpone to taste

Preparation

For the cherry compote:

  1. Remove the pits from the cherries with the help of the OXO cherry pitter, then add them to a saucepan with the orange juice and sugar.
  2. Cook over medium-low heat uncovered for about 30 minutes, until you see that it has reduced by half.

For the heart-shaped waffles:

  1. Mix the yeast with the milk and sugar in a large bowl until completely dissolved. Let it rest for 5 minutes.
  2. Next, add the sugar, eggs, flour, butter and salt and mix well until well incorporated. Let the mixture rest in a warm place for 15 minutes to an hour.
  3. Preheat your waffle maker (we used the heart-shaped one here, but you can use the Nordic Ware square waffle maker if that's what you have). It's important that the waffle maker is really hot before you add the batter.
  4. Brush the waffle iron with a little oil or butter to cover all the corners.
  5. Add 230 ml of the batter into the waffle maker (this will be approximately one or two scoops, depending on the size of your pan), and spread it to cover all 5 cavities.
  6. Cook on one side for 3 to 5 minutes, then flip and cook on the other side until done. You'll see that they're golden and puffy when done.

For assembly

  1. Take a waffle and top it with a spoonful of mascarpone and a little cherry jam.
  2. If you prefer, you can also make the mascarpone and cherry jam mixture separately and serve it already mixed.

The surprise touch for the table: set aside one of the waffles and sprinkle sugar on top while it is still hot, so that it gets moistened with the steam from the waffle itself (or apply a drop of water to the sugar and mix, before pouring it into the waffle). Use a skewer and a support like a small vase (I used the Gefu sugar bowl , which always comes in handy for these things) to place the waffle flag on the table (it's an easy and original idea to decorate the Valentine's Day table or to make any day special, don't you think?).
