Beyond traditional crepes, there is a world of original crepes to discover. Today I bring you a savory crepe of the tastiest: American hamburger crepe, sweet onion with honey and goat cheese . A winning combination!

Crepes are a very easy liquid preparation to prepare. I strongly encourage you to see how it is made and to enjoy them with both sweet and savoury. To make them, you only need a crepe maker , which is nothing more than a pan with a wide surface and low walls that make it easier for you to turn. The important thing is that, before you incorporate the dough, the crepe is very hot.

The burger, thanks to the touch of mustard and Perrins sauce, you manage to emphasize the flavor of the meat a lot. On the other hand, the caramelized onion with honey creates a contrast with the most delicious hamburger. And finally the goat cheese, which amalgamates all these textures and flavors to make a perfect bite.

For the crepe:

  • 3 medium eggs
  • 250 ml of whole milk
  • 2 ml olive oil
  • 130 gr wheat flour
  • 1 cc of sugar
  • a pinch of salt

For the filling:

For the burger (for 4 large or 6 medium burgers):

  • 450 gr of minced beef, pork or mixed meat
  • Salt
  • Pepper
  • 1 egg yolk
  • 1 cc of Dijon mustard
  • 1 cc Perrins sauce
  • some parsley leaves
  • Rolled goat cheese
  • 1 sweet onion
  • 1 cc of soft honey
  • Oil



Preparation of the crepe batter:

  1. In a bowl, add all the ingredients and mix with a ball-end mixer to prevent lumps and air from entering the mixture (or with an electric mixer). Once mixed, set aside for at least half an hour for the flour to hydrate.
  2. After the resting time, put the crepe on the fire until it is very hot. Add a ladle of the crepe batter, spread it over the entire surface (you can help with a crepe rake) and wait for the edges to separate or rise slightly - this is a good indicator that the batter is done on one side. Help yourself with a crepe shovel to lift it up and turn it around. Wait until it is also done on that side and remove the crepe to a plate.
  3. Prepare all the crepes until the dough is finished. You can keep the crepes warm by covering them with a cotton cloth.

Preparation of the American hamburger:

  1. In a bowl, arrange the meat and salt and pepper to taste.
  2. Separate the white from the yolk and beat the yolk. Incorporate it into the meat (the white toughens the meat, so it is better not to put it).
  3. Add a tablespoon of mustard and one of Perrins sauce, and mix integrating all the ingredients.
  4. Chop some parsley and add it to the mixture. Correct the salt if you see it necessary and continue mixing with a spatula until everything is well integrated.
  5. With a couple of spoons, your hands or with the help of a hamburger press, form the hamburgers.
  6. Heat a cast-iron griddle or skillet-type cast iron pan, add a little oil and grill the burgers - round and round.

Preparation of the onion with honey:

  1. Chop the fine onion.
  2. Heat a skillet or the Balti Dish over medium heat, add a splash of oil and add the onion. Let it simmer.
  3. When the onion begins to become transparent, add a tablespoon of rosemary honey or another mild honey. Mix and let it cook for a few more minutes.

Assembly of the pancake:

  1. You already have the crepes, the onion and the hamburger ready.
  2. Cut some very thin slices of goat cheese.
  3. Apply a radial cut on the crepe (from the center to one end). To the right of the cut incorporate the hamburger. In the quarter crepe on top of the burger, add the goat cheese, and in the quarter crepe to the left of the cheese, scatter the onion.
  4. Arranged the ingredients on top of the crepe, it is time to form it: fold the quarter of the crepe that you have empty (without ingredients on top) towards the top, thus covering the room with onion. Pick up all that quarter that has been folded and fold it to the right, covering the goat cheese. Finally, fold it down, covering the burger. In the video you will clearly see how to do it.

  • Onion with honey is a practical resource to sweeten honey and give it a most aromatic touch, which combines with fish and meat in an exceptional way. It will be a fabulous addition to any everyday dish!
