Today I bring you a very easy and quick recipe, perfect for a casual meal or a different snack-dinner. These griddle fajitas are going to delight you and since they are so simple to make, you'll be repeating them a lot this summer. And also the rest of the year!

One of the advantages of these fajitas, besides being delicious, is that you can make them to your liking. In this recipe they include chicken breast, onion and fennel, and a homemade guacamole with a lovely spicy kick from Tabasco that pairs wonderfully with the freshness provided by the lime and the lemon.

And another advantage is that you can make them wherever you want, both outdoors, on the barbecue, and indoors, in your home kitchen and with your iron griddle. So you have no excuse not to prepare these griddle fajitas today. You'll see they'll ask you for more!

Ingredients

  • 4 tortillas (corn or wheat, whichever you prefer)
  • 2 chicken breasts
  • 1 fennel bulb
  • 2 tomatoes
  • 1 onion
  • Fresh parsley
  • 3 ripe avocados
  • 1 lime
  • 1 lemon
  • Canned corn
  • Grated cheese
  • Tabasco to taste
  • EVOO
  • Salt and black pepper to taste

Preparation

  1. Cut the chicken breasts into fillets and brown them with a little EVOO on your barbecue griddle or on your home stove, with your Mineral B smooth iron grill (you can also use a cast-iron skillet or even your Carbone Plus paella pan).
  2. Add salt and pepper to the chicken fillets and flip them so they brown on all sides.
  3. Meanwhile, peel and cut the fennel bulb and the onion into thin slices with your mandoline Kobra de Buyer.
  4. Set the chicken to one side of the griddle to cook the vegetables. Add the onion and fennel slices and a few parsley leaves, and let them brown well.
  5. Now you need to prepare the guacamole. Cut the avocado in half and scoop out the flesh (you can easily do this with the Microplane 3-in-1 avocado tool).
  6. Put the avocado flesh in a bowl and add the tomato cut into small dice. Add Tabasco to taste, 2-3 tablespoons of EVOO, and the juice of the lime. Stir well to mix the ingredients and set aside.
  7. Place the tortillas on the griddle and start filling them by adding grated cheese, a little parsley, and a generous spoonful of guacamole to each one.
  8. Place the chicken fillets on top of the guacamole, and add the vegetables on top.
  9. Dress with a little lemon juice, a bit of Tabasco and a drizzle of EVOO.
  10. Finally, add a tablespoon of sweet corn. Done! Now all that's left is to take a big bite and you'll see how wonderful it is.

Suggestions

  • The ingredients are for two people, counting two fajitas per person. If soois more or less, just adjust the quantities according to the number of diners.
  • The fillings these fajitas accept are as many as you can imagine: beef with eggplant and mushrooms or chicken with peppers and mustard mayonnaise, salmon with zucchini and carrot sautéed with a mild aioli and a touch of soy sauce,... whatever you imagine with the ingredients you have in the fridge or with those you want to buy at the market.
