You can make pizza without turning on the oven! How about that? The recipe to make pizza in a pan is ideal for making assorted mini pizzas or preparing a delicious individual-sized pizza, but without needing to turn on the oven: a very easy pizza dough recipe that you’ll cook in a few minutes and that you can top with your favorite ingredients.

That it's an easy recipe to prepare doesn't mean you don't need planning: it's convenient for the dough to rest for a few hours, so keep in mind you'll need to make it the day before you enjoy it. The wait is worth it.

Ideas to accompany your pizzas

As for how to fill it, that's a matter of taste: with or without tomato, with onion, cheeses, chorizo or ham, endive or arugula, raisins and nuts or fruit like pineapple or pear, olives, anchovies, tuna, peppers, egg... You'll have dough to prepare delicious assorted mini pizzas, or make them larger with your favorite toppings.

Pro Le Creuset nonstick pan

Ingredients

For 8 medium pizzas or 12 mini pizzas.

For the dough:

  • 10 g of yeast
  • 140 ml of warm water
  • A pinch of sea salt
  • A pinch of sugar
  • 1 tbsp of olive oil
  • 250 g of flour

Others: Optional: sprigs of rosemary and/or sage.

Preparation

  1. In a glass with the warm water, crumble the yeast and dissolve it.
  2. In a bowl, mix the salt, sugar and olive oil with the flour and add the water with the yeast. Mix everything until you get a homogeneous dough. Cover it or wrap it in plastic wrap and let it rest in the refrigerator from one day to the next.
  3. The next day, remove the dough from the refrigerator and let it lose its chill for 30 minutes.
  4. Roll out the dough to form 8 medium discs or 12 mini pizzas. Heat a large pan (I recommend using a pan nonstick or the Le Creuset cast-iron Skillet, brushed with oil), add a little olive oil and place 3-4 pancakes. If you like pizzas with a good herbal flavor, sprinkle some herbs over the dough; they will release all their aroma. Cover the pan (you can use the Nordic Ware smoking lid) and let cook for 3-4 minutes, until you see them golden.
  5. Remove the lid, flip them and cook on the other side for a few minutes. In about 5-7 minutes they're ready!

Notes

  • When you flip them, it's a good time to add tomato sauce, cheese and the toppings you want. That way, with the heat of the pan while the second side cooks, the cheese will melt.
  • Also keep in mind that pizza dough with no topping other than some roasted herbs sprinkled on top is an ideal bite, both as an appetizer and to accompany salads, roasted meats, fish... Instead of using the popular focaccia, use these flavored pizzas and you'll see how successful they are.
  • Remember some like it spicy, so a drizzle of pizza oil can also be the final kick to these delicious pan pizzas.
