Because I bring you a recipe you can make at home that not only meets all the previous requirements but is also very quick and easy to make. Pay attention, because these apricot energy bites (balls, bombs, or little apricot energy balls) are an irresistibly tempting treat.
These little sweets are packed with flavor and are very nutritious. They have the advantage of being ready in no time and are the perfect snack to satisfy sweet cravings. Roasted nuts will give them a flavor note that can change each time you make them—just swap almonds for hazelnuts, add pistachios, or create a mixed variety.
And an interesting point to consider is that by shaping them into balls, you can make the apricot energy bites any size you want, whether the size of a bonbon to enjoy in the afternoon with a cup of tea, or a bit larger to curb morning hunger between breakfast and lunch.

Ingredients for 2 people
- 150 g of nuts: you can use a single type of nut or mix different ones as you prefer, such as cashews, pistachios, walnuts, almonds, hazelnuts... (see notes)
- 30 g of sesame seeds
- 150 g of dried apricots
- 1 tablespoon of agave syrup
- 3 or 4 tablespoons of desiccated coconut
Preparation
- In a non-stick frying pan toast the shelled nuts you have chosen (we used cashews and pistachios). Do it over medium heat, stirring occasionally and without adding oil or any other fat.
- After a few minutes, when you start to notice the toasted smell of the nut, turn off the heat and let them cool slightly.
- Place the toasted nuts in a chopper or food processor, along with the sesame seeds, dried apricots, and agave syrup. Blend until you have a homogeneous mixture.
- Use small spoons to portion the dough and shape them into balls about the size of a truffle, approximately. If you want larger balls, you can use croquette tongs.
- Place the desiccated coconut on a tray or plate and coat the balls.
- Let the treats cool for about 20 minutes before taking the first bite.

Notes
- As you can see, this is a very quick and easy recipe that only requires the time to toast the nuts. Once ready, you'll have the treats in a few minutes.
- Use whichever nut you like best: cashews, hazelnuts, almonds, pistachios... But whichever you choose, when toasting, do it lightly and over medium-low heat, stirring occasionally and watching closely to avoid over-toasting.

- Instead of dried apricots (or part of them), you can use pitted dates or another dried fruit if you have it at home. These treats are one of many recipes you can make with dried fruit, seeds, cereals, or nuts. Change ingredients according to your preferred tastes and combine different fruits or nuts to make varied treats and have different snacks to choose from.

Hola Trinidad, Marisa lo dice un poco en broma pero la verdad es que buena razón tiene… Puedes combinar estas bolas energéticas con varios ingredietnes, escogiendo el que más te guste: puedes pasarlas por cacao en polvo, por ejemplo, o bañarlas de almendras o nueces troceadas (como si hicieras panellets, puedes pincelarlas de huevo o de agua con azúcar y pasarlas por tus frutos secos favoritos para asegurar que queden pegados… aunque sin nada y presionando un poco también se quedarán pegados); también puedes bañarlos de azúcar o de azúcar avainillado, o de una mezcla de canela, azúcar moreno y cacao, por ejemplo.
