If I tell you that today's recipe, besides being delicious, will be ready in the blink of an eye I'm not exaggerating, because preparing these roasted carrots with hazelnuts will take very little time, and you'll be licking your fingers!
Cooked this way they turn out very appetizing. Make sure to choose good carrots, free of dirt and with smooth, firm skin. Pick ones that are rather small or medium in size and that have no lateral roots or green spots on the tip, to ensure the carrots you cook are those that have grown optimally.
Once cleaned and seasoned, the rest of the work will be done by the oven. And in the time it takes to set the table, they'll be ready to enjoy. A delicious, easy-to-make side dish that will surprise you.
Do you have the carrots ready? Here is the recipe.
Ingredients
- 1 bunch of carrots
- 2 tbsp melted butter
- One and a half tablespoons of honey
- 1 tbsp balsamic vinegar
- Salt
- Pepper
- Sliced garlic
- Chopped hazelnuts
Preparation
- Preheat the oven to 200 °C.
- Mix the butter, honey, balsamic vinegar, salt, pepper and sliced garlic in a bowl.
- Add the cleaned carrots and stir so they are well coated.
- Arrange them on the skillet, add some chopped hazelnuts and bake for about 10 minutes.
- Turn the carrots over and bake until they are done. Delicious!

Notes
- I encourage you to also add some herbes de Provence; it gives a fresher touch.
- This recipe is perfect for using carrots as a "side dish", as an accompaniment: they're perfect alongside a fish dish, or with meat on the grill. If you'd like it as a first course, it's ideal to serve with a bit of rice.
- We did it with hazelnuts, but if you want to pair it with cashews, for example, or other nuts, they also go great.

Hola Maria Irene, la verdad es que no, en el sentido de que no quedan como cuando las hierbes, por ejemplo…. Quedan más bien duras, pero sí con la parte exterior algo más tierna (cuesta un poco aún clavar el tenedor… para explicarme).
saludos!
