Last weekend I tried the tofu burgers. At home we love burgers; in fact I've been innovating and making them for quite some time now not only with chicken or beef but with various ingredients that manage to surprise.

It wasn't long ago when I discovered vegetable burgers, which are suitable for vegans; they can be made with legumes, like lentils and chickpeas, but I had always wanted to try with tofu.

Now it's easy to find in any supermarket so we have it close at hand. It's true that in this case the Gefu burger press has been a great help, since the mixture needs to be well compacted to get good results. Do you feel like trying them?

Ingredients

  • 300 gr of tofu
  • 75 g of cooked chickpeas
  • 1 onion
  • 1 carrot
  • 1 clove of garlic
  • 2 tablespoons of soy sauce
  • 1 tablespoon of grated ginger, preferably fresh
  • 1 teaspoon of cumin
  • Breadcrumbs
  • Olive oil

Preparation

  1. First we must drain the tofu well. For this we place it on the WMF Gourmet stainless steel drainer for about an hour. We let it release the water and help in the process by pressing it, from time to time, firmly with a flat stainless steel spatula.
  2. We finely chop the onion and carrot, lightly salt them and sauté for half an hour in a pan.
  3. Meanwhile, we mash the chickpeas with the garlic and the soy sauce.
  4. Finally we mix the sautéed vegetables with the chickpea purée and add the mashed tofu (by machine or crushed with a fork).
  5. With the help of the Gefu burger press we form the burgers.
  6. We coat them with breadcrumbs and fry them in oil at medium-high heat with the mineral B De Buyer cast-iron frying pan (I used the French stainless steel handle version) so they seal, taking special care when flipping them.
  7. We will use a spatula to move them from one side to the other, the mixture is delicate and can break fairly easily.

Tip: It's important that the dough is very dry and well drained, not only the tofu but the sautéed onion and carrot should not add water to the mixture.
