This spiced pumpkin cake is exceptional! It has a very vibrant flavor, thanks to all the spices it includes. Today we shape it like a pumpkin, using the Nordic Ware Pumpkin mold (isn't it super pretty and original?), but you can shape it as bundt cake or another loaf cake, there are so many pretty shapes!

Don't think twice, get your hands in the dough!

Ingredients

  • 340 g of flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 170 g of sugar
  • 170 g of brown sugar
  • 1 tsp vanilla extract
  • 225 g cooked pumpkin
  • 110 g of melted and slightly cooled butter
  • 2 eggs
  • 60 ml of milk
  • A little cinnamon sugar for sprinkling

Preparation

  1. Preheat the oven to 175 ºC
  2. Prepare the pan with baking spray and dust with flour.
  3. In a bowl mix the flour, baking powder, baking soda, spices and salt. Set aside.
  4. In a slightly larger bowl, mix the sugar, vanilla, pumpkin, eggs and butter until the mixture is smooth.
  5. Add the flour mixture and the milk to the other bowl with the rest of the ingredients. It's important to sift the flour and add it little by little to avoid lumps forming.
  6. Once you have a very smooth batter, pour the batter into the prepared pan you prepared earlier.
  7. Give the pan a gentle tap on the countertop to remove any bubbles that may have formed in the batter.
  8. Bake until done for 40-50 minutes. To check if the cake is ready, insert a clean toothpick into the center and when you remove it see if it comes out clean or if a little of the uncooked batter remains stuck.
  9. When you take the cake out of the oven, let it cool on a rack still in the pan. After these 10 minutes have passed, it's time to unmold the cake and let it cool again on the rack.

  • You can decorate this cake however you like. You can sprinkle a little cinnamon on top, or powdered sugar, or if you prefer more flavorful cakes, you can try putting a bit of jam inside.
  • To know perfectly whether your cake is ready to be taken out of the oven, you can use the Nordic Ware cake thermometer. Another very effective trick is to check if there is a 1 or 2 mm gap between the pan and the cake — this means the cake is ready.
