I love the crunchiness of spring rolls . Making them at home takes very little time and allows me to make the filling to my liking or adapt it to the ingredients I have at that moment. Today, we bring you a good recipe for beef rolls, with a touch of curry that makes them delicious in contrast to the sweetness of the brick pastry that surrounds them.
Since they are so easy to prepare, spring rolls are a fantastic resource for a quick dinner or a different appetizer. And to make them healthier, there is nothing better than cooking them in the air fryer, which will make them just as delicious without using hardly any oil.
As you may already know, air fryers, such as the Tefal Actifry Genius , combine hot air with gentle automated movements, just like convection ovens do, achieving a result very similar to traditional frying. This way we can eat a portion of croquettes or some empanadas, but without the feeling of guilt and the annoying smells caused by traditional frying.
These are two good reasons to cook in an oil-free fryer, but not the only ones, as it is a great option for preparing a multitude of different recipes. It allows you to eat delicious food, eat a variety of foods and eat healthy, as it maintains the nutritional value of foods, whether fresh or frozen. The recipe I'm showing you today is very easy to prepare and you'll have it ready in no time: spring rolls with beef and vegetables and a touch of coriander. You can see the step-by-step instructions in the video below.
Ingredients
- 1 medium onion
- 2 or 3 carrots
- A few cilantro leaves
- 125-150 g minced beef
- Breadcrumbs (1 or 2 tablespoons)
- 1 tablespoon ActiFry curry powder
- 1 tablespoon ActiFry olive oil
- Brick pastry (a roll or a package of pre-cut sheets)
- Salt
- Pepper
- 1 beaten egg
Preparation
How to prepare the rolls:
- Chop or grate the onion and carrot. You can do this with a knife , a grater or a chopper , depending on the texture you prefer.
- We finely chop the coriander leaves.
- In a bowl, mix the minced meat with the onion, carrot, coriander, curry and breadcrumbs until everything is well combined. Season with salt and pepper to taste.
- We divide the filling into as many portions as we want to make rolls. In this case we make 9 small rolls, so we will make 9 portions with the filling and shape them into elongated croquettes or rolls.
- When preparing the rolls, since the brick pastry dries very quickly, we do it sheet by sheet. We spread the first sheet, brush it with beaten egg, place a roll of the filling on it and roll the dough into a roll.
How to fry the rolls:
- In an oil-free fryer:
- Once we have the 9 rolls formed, if we are going to fry them without oil, we remove the tank from the Actifry Oil-Free Fryer , brush it with a little olive oil and place the rolls so that they are separated. We place the tank in the fryer and program the ROLLS mode (4) and the duration, which will be 20 minutes.
- After the time has elapsed, the rolls will be ready.
- In a conventional oven: You can make the rolls in the oven with a little oil:
- Place the rolls in a skillet (oven-safe) or on a baking tray, drizzle with oil and turn on the top and bottom oven function to 180ºC.
- Check the rolls constantly and it is important to turn them so that they are cooked on all sides and above all make sure that they do not overcook or burn. In about 25-30 minutes they will be done.
- Traditional rolls, in a frying pan or deep fryer:
- Apply a finger and a half of oil to the cast iron skillet or a deep frying pan or wok and turn the heat to medium power.
- When the oil is hot, add the rolls and let them fry, turning them to cook them on both sides.
- Remove them with a slotted spoon to drain the oil and ensure they do not break, and place them on a plate or dish with kitchen paper to absorb the excess oil. Let them rest for a few minutes and serve.
When serving:
- We serve it with a salad or a little rice and the sauce of our choice, and enjoy!

You can vary the recipe depending on what you fancy eating or the ingredients you have at home. You can use parsley instead of coriander, make them with chicken or prawns or just with vegetables, or prepare the rolls with rice wafers if you prefer them to brick pastry. The possibilities are as many as you like, but always just as simple, crunchy and quick to make. And without using almost any oil!
