I'm sure you're going to love these banana biscuits . The recipe gives you the option of making them with banana and chocolate, and I definitely recommend it - the touch of the melted chocolate chips inside combines incredibly well with the banana, while giving it a boost of flavour and vice (and after all, what do we look for when we make pastries?
Since these cakelets contain banana , they are very juicy. It is a recipe that takes no time at all to prepare and the result is worth it.
They are ideal for serving for breakfast or as an individual snack. They are made with Nordic Ware's Brilliance Bundtlette moulds , which give them this beautiful and elegant shape.
You will see that among the ingredients is the Nomu vanilla extract . I find it sensational. It gives an authentic vanilla flavour to my creations and it is very handy to have a bottle in the pantry. You have to be ready to prepare a delicious dessert at any time!
Treat yourself to these Banana Bundt Cakes. I'm sure you'll love them. You also have the option of making them in banana bundt cake or sponge cake form - simply pour the batter into a large baking sheet or bundt pan instead of a single-serving cake pan.
Ingredients
- 1 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 1/4 cup yogurt
- 1 cup mashed very ripe bananas*
- 1/4 cup melted butter
- 1/3 cup sugar
- 1/4 cup brown sugar, packed
- 1 large egg
- 1 tablespoon Nomu vanilla extract
- Optional: chocolate chips (to make chocolate banana cookies)
To understand the quantities, just take a glass or cup with a capacity of 250 ml of water. Fill that same glass to measure all the ingredients.
- A 250ml glass or cup of water will be equivalent to a 125g glass or cup of flour.
*To make the banana puree, simply mash them with a fork.
Golden brilliance Bundtlette mold Nordic Ware
Preparation
- Preheat oven to 180°C. Coat the Nordic Ware Brilliance Bundtlette pan with flour-based release spray and evenly coat the details of the pan with a pastry brush.
- In a bowl , mix the flour, baking soda, cinnamon and salt.
- In another bowl, mix the yogurt and banana puree. Set aside.
- Using a hand mixer or electric mixer fitted with whisk attachment, cream together the butter and both sugars. Add the egg and vanilla and mix well. Add half of the flour mixture, then half of the banana mixture. Combine completely before adding the other half of the flour and banana mixture. Scrape down the sides of the bowl and mix until fully incorporated.
- If you want to make the banana and chocolate cookies, now is the time to add the chocolate chips (a good handful or two, to your liking). Mix well so that they are evenly distributed throughout the dough.
- Pour evenly into the prepared pan, filling each cavity only ¾ full. Tap the pan on the counter to remove any air bubbles.
- Bake for 15-20 minutes or until toothpick inserted comes out clean. Remove from oven, wait 8-10 minutes before unmolding by inverting pan onto a cooling rack.
- Wait for them to cool and enjoy! You can sprinkle a little brown sugar and powdered sugar on top to decorate with the help of a hand strainer.

- To make the banana puree, simply mash them with a fork: just press the bananas to break them up, that's all. As they have to be ripe bananas, you'll find it's very easy. You can also do it with a food processor or a food processor, but there's no need to make a mess in this case... Put the bananas in the bowl and just mash them.
- Banana and chocolate go very well together. I recommend adding a few handfuls so they melt inside the cakes, making each bite even more delicious.
- IMPORTANT! We suggest making it in mini cakes, but you can give it a traditional cake shape by making it in a rectangular tray (for example, with the same quantities, I often make it in the Laura Ashley tray, which is not very big and fits perfectly). Or you can choose to make it in a standard bundt mould, here you will find the most popular ones and others that we really like.
