Let's make the most of the Dupla! The Bra double frying pan is wonderful: it's already great to use on its own, individually, but when you join those two pans you can work wonders. From a perfect omelette without spilling a drop to a tarte Tatin... Or this delicious recipe of roasted apples with custard with a touch of vanilla! A perfect and ideal dessert that I strongly encourage you to try.
Ingredients
For the roasted apples:- 4 apples (we used Gala, which with that tart note will contrast more with the custard, but with Golden the recipe is also delicious)
- 80 ml of water
- 2 tablespoons of butter
- 1 cinnamon stick
- 1 generous tablespoon of panela
For the custard:
- 500 ml of milk at room temperature
- 3 egg yolks size M
- 6 tablespoons of sugar
- 1 heaping tablespoon of cornstarch
- The peel of one lemon
- The peel of one orange
Preparation
- Place the clean, unpeeled apples in the pan Dupla by Bra. Prick them with a toothpick and sprinkle the tablespoon of panela over them. Insert the cinnamon stick inside and cover the pan with its other half. Cook over low heat and let simmer for 40 minutes.
- After this time, turn off the heat and let the pan rest for 5 minutes before opening it.
- While the apples are cooking, let's prepare the custard. In asaucepan (we used the classic Efficient Orange), heat the milk together with the lemon peel, orange peel and sugar. Let simmer over low heat for 10 minutes to infuse the milk with the citrus aromas. Stir occasionally.
- Strain the infused milk and return it to the saucepan. Add the beaten egg yolks and heat over medium heat, taking care that it does not boil and stirring constantly with a whisk.
- In a separate glass, dissolve the cornstarch in 3 tablespoons of milk at room temperature or cold. When the milk in the saucepan begins to thicken, add the dissolved cornstarch and continue stirring until the custard thickens further, without letting it come to a boil at any time: you'll notice the mixture in the pan suddenly gaining body, becoming denser; when that happens wait half a minute more while continuing to stir and... Custard ready!
- When serving, present one apple in a bowl or on a plate and serve with the custard, either in a separate bowl for each person to serve themselves or by pouring a few tablespoons or a ladle of custard over the apple (if you do it in front of the diner, I can attest that their mouth will water and they'll be eager to try this delicious dessert).
- As a final touch, you can sprinkle ground cinnamon and panela on top.

This recipe had been winking at me for a while. Our dear Loleta made it for Bra some time ago, and we finally bring it to the blog. I hope you enjoy it a lot.
Notes:
You'll be pleased to know that the Bra Dupla pan serves for much more than making perfect omelettes:- Set some eggs on top of chickpeas, a ratatouille, some potatoes... in just 3 minutes, without a drop of oil.
- Roast some peppers, some strawberries, a... without needing to turn on the oven
- Make pizza in the pan, or prepare a tarte Tatin in the Dupla, since it produces a wonderful oven effect over the heat, without needing to use the oven.
- Use it as an individual pan and cover with the second pan to melt the cheese quickly in whatever recipe you're preparing.
- Make delicious apples or pears in wine.
- Use it to make jam, you'll see how the fruit melts quickly.
- Keep your meals hot for longer.

Esto me recuerda al Apple Pie de mi tierra (Inglaterra) con custard, solo que engorda mucho menos porque no hay shortcrust pastry (masa quebrada)…. Que rico… Gracias!
