To go with the sandwich and enjoy a balanced meal, I chose a simple green salad with tomato, lettuce, and spring onion, dressed with a fantastic balsamic vinegar of Modena that comes with a super handy spray, which you can find in the “Pantry” section at Claudia&Julia.

Ingredients (serves 4)

  • A loaf of the best-quality bread you can find
  • 2 Golden apples
  • 2 organic chicken breasts
  • 1 wedge of Brie cheese
  • mayonnaise to taste
  • salt
  • black pepper

Preparation

  1. Turn on the barbecue and place the apples on the grill. Close the lid and let the apples roast over medium heat. After 10 minutes, turn them over and keep cooking with the lid closed until they’re tender. In total, you should roast them for 20 to 25 minutes. Remove and set aside.
  2. Slice the chicken breasts and season with salt and pepper. Cook them on the barbecue.
  3. Assemble the sandwiches as follows: spread mayonnaise on the bottom half of the bread, then add the chicken breast, a bit of Brie, and the roasted apple, peeled and cored. Quantities are up to you.
  4. Place the sandwiches on the grill and close the lid. Leave for 3 minutes on the lowest heat. This way the bread will warm and the cheese will melt.
  5. Serve immediately with a green salad.
