Here’s another recipe by Stéphane Poussardin (L'Atelier d'Stéphane) made in our showroom, We Love Cooking. It’s a very easy and original appetizer that you can cook with our Le Creuset grill and a De Buyer Kobra mandoline or Gefu ceramic mandoline.

Ingredients for 4 people:

• 1/2 red apple

• 1 tbsp honey

Sesame oil

• Water

• Toasted sesame

For the cannelloni:

• 1 zucchini

• 250 g French goat cheese "President"

• 20 g 35% cream

• 2 tbsp olive oil

• Salt

• Pepper

• Ground oregano

Preparation:

For the cannelloni: In a bowl, mix the goat cheese with the cream, olive oil, oregano, salt, and pepper. Set aside. Using a peeler or a mandoline, slice the zucchini lengthwise into long ribbons. Set aside.

For the honey vinaigrette: Make a vinaigrette with the honey and a little water, then gradually whisk in the sesame oil until you get a smooth, light, creamy texture.

Plating: Heat the grill and sear each zucchini ribbon on one side. Lay out the zucchini ribbons, place small dollops of the cheese mixture on top, and roll to form cannelloni. Serve the cannelloni warm with the apple cut into small dice and the honey–sesame vinaigrette.
