Preparing this dish is not difficult at all and the result is delicious. Ingredients
- 1 onion, finely chopped
- 2 garlic cloves, finely chopped, pressed or grated
- 1 tablespoon tomato purée
- 5 tablespoons extra virgin olive oil
- 200 ml vegetable stock
- 800 g grated fresh tomatoes
- 1 teaspoon agave syrup or mild honey
- 1 tablespoon dried Mediterranean herbs (thyme, oregano and rosemary)
- 1 bay leaf
- 400 g spaghetti (or any other pasta, preferably long)
- 100 g capers in brine
- 100 g pine nuts
- 1 level tablespoon plain flour
- 50 g Parmesan cheese
- 10–15 g fresh basil
Method
- Heat 3 tablespoons of olive oil in your Essential Black Fissler ceramic frying pan and add the chopped garlic and onion. Sauté over a medium heat for about 3 minutes.
- Add the tablespoon of tomato purée and stir well. Deglaze with the vegetable stock, stirring to combine all the ingredients.
- Now add the grated tomatoes, agave syrup, dried herbs and bay leaf. Season with salt and pepper and stir before covering. Let the sauce cook over a low heat for about 15 minutes, stirring from time to time.
- Heat the water to cook the pasta in your Pure Fissler stainless steel pot with glass lid and add the spaghetti when the water comes to the boil. Cook according to the instructions on the packet.
- While the pasta is cooking, drain the capers and rinse them in a colander. Let them drain and dry them thoroughly with kitchen paper.
- Heat two tablespoons of olive oil in a ceramic frying pan and fry the capers for a few minutes until crispy.
- Remove the capers from the pan and place them on absorbent paper. Set aside.
- Wipe the oil from the pan and toast the pine nuts, stirring constantly, for a few minutes until they start to turn golden.
- Drain the spaghetti and plate up. Spoon a generous amount of sauce over each portion, add some capers and a few pine nuts. Sprinkle with shavings of Parmesan and serve with a few fresh basil leaves on top.
