One of the great classics of Spanish cuisine is hake in green sauce. Simple to make, but powerful in the result. To make it perfect you need quality ingredients: very fresh hake, a good extra virgin olive oil, a homemade fish stock, a quality white wine and parsley, lots of parsley.

In addition to the basics, hake in green sauce can be livened up with a handful of clams, asparagus, prawns and hard-boiled egg, but this is optional.

It can be served for an everyday meal or a special occasion, enriched with clams and white asparagus. It's perfect for dinner, as it isn't heavy if we don't go overboard with the bread we're going to want to dip in its tasty sauce.

Ingredients

  • 4 hake steaks
  • 2 garlic cloves
  • 1 onion
  • 10 g of wheat flour
  • 100 ml of white wine
  • 200 ml of fish stock
  • Fresh parsley
  • Extra virgin olive oil
  • Salt
  • Ground black pepper

Preparation

  1. Peel and chop the garlic cloves and the onion. Cut the latter into pieces and put it into the Gefu manual chopper along with the garlic. Chop until you have small pieces.
  2. Heat a polo of extra virgin olive oil in a frying pan and gently cook the onion and garlic for 10 minutes or until they are tender, but do brown. Add the flour, stir well and sauté for a couple of minutes.
  3. Pour in the white wine and the stock, stir so no lumps form with the flour and cook for ten minutes.
  4. Meanwhile, chop a good handful of fresh parsley leaves and add them to the pot.
  5. Season the hake steaks with salt and pepper on both sides and add them to the frying pan.
  6. Cook over medium heat for five minutes or until the hake is cooked but juicy. Serve immediately.

Hola José, ¡Qué despiste! Ciertamente lo idal es una rodaja por persona si son generosas y hermosas, o algo más si son rodajas pequeñas. La receta se ha hecho con 4 rodajas (lo acabo de añadir), verás que la salsa para esa cantidad de rodajas sale muy equilibrada en cantidad.

  2. Heat a drizzle of extra virgin olive oil in a frying pan and gently cook the onion and garlic for 10 minutes or until tender, but without browning. Add the flour, stir well, and cook for a couple of minutes.

  3. Pour in the white wine and the stock, stirring so that no lumps form with the flour, and cook for ten minutes.
  4. Meanwhile, finely chop a generous handful of fresh parsley leaves and add them to the pan.
  5. Season the hake steaks with salt and pepper on both sides and add them to the frying pan.
  6. Cook over medium heat for five minutes or until the hake is cooked through but still juicy. Serve immediately.
