I have not seen a quicker and easier cookie recipe to make than this banana and oatmeal cookie recipe . It is as easy to make as mash the banana, mix with the oats and bake. Just as you read it, and some great healthy ( and gluten-free ) cookies come out. But since I personally like to give them more joy, I bring you the two versions of this recipe that are most successful at home. Of course, they incorporate chocolate: we are going to prepare " Oatmeal and chocolate cookies " and " Oatmeal cookies, coconut and chocolate coating ". Which one do you think you'll stay with?

The preparation of these cookies is very fast. Both the base recipe that I mentioned and these versions that I bring today. And there is no healthier cookie, since they do not incorporate a pinch of sugar , since we take advantage of the sweetness of the banana to sweeten them.

Oatmeal Banana Cookies

The original recipe, the banana with oatmeal, tastes good, but in my opinion you have to really like the banana (since you don't have anything else, it's much appreciated, since the oatmeal doesn't taste much...). I love them with chocolate, because it is intense, bitter, gives a lot of life to oatmeal and marvels with the flavor of banana, which stops gaining prominence.

I must tell you, in case you have doubts, that two of my children are not big fans of bananas (actually I'm being nice, they don't like anything at all), but I didn't tell them that they had bananas and they devoured the cookies.

At the end of the post, I give you a couple of things that I like to do when I prepare these cookies.

I'm going with my two oatmeal cookie recipes, but you'll have to tell me which one you like best!

1) Oatmeal Banana Chocolate Chip Cookies Recipe

Ingredients

  • 1 large ripe banana
  • 90 gr of oat flakes (gluten-free, for gluten-free recipe)
  • 45 gr of pastry chocolate
  • Half a teaspoon of ginger
  • (Optional) A tablespoon of agave syrup or honey*

*The spoonful of agave syrup is for its aroma, not for the need to sweeten the cookies since they are already sweet with the banana.

Preparation

  1. In a bowl, mash the banana with the help of a fork or a potato masher.
  2. Add the oat flakes and mix until the mixture is homogeneous. If you think that oats are missing, you can add one more tablespoon, but there must be a mixture dominated by oats but integrated by the banana.
  3. Chop the chocolate with the help of a chef's knife.
  4. To the oat mixture, add the syrup (optional), ginger and chopped chocolate. Mix until integrated.
  5. Arrange a perforated tray , and with the help of a spoon and a spatula, pick up bits of dough and shape them into a cookie on the tray. They should be of similar size and thickness, to ensure even baking. Continue until the dough is finished.
  6. Preheat to 200 ºC and place the tray in the oven, in the middle/upper part. You will see that they are done quickly, in about 10-12 minutes you will have them golden brown and ready to enjoy.

2) Recipes for oatmeal cookies, coconut and chocolate coating

Ingredients

  • 1 large ripe banana
  • 90 gr of oat flakes (gluten-free, for gluten-free recipe)
  • 2 tablespoons of shredded coconut
  • 1 tbsp La Tourongelle coconut oil
  • For the coverage: 50 gr of confectionery chocolate and a couple of tablespoons of whipping or cooking cream.

Preparation

  1. In a bowl, mash the banana with the help of a fork or a potato masher.
  2. Add the oat flakes and mix until the mixture is homogeneous.
  3. Add the shredded coconut and liquid coconut oil, and mix.
  4. Shape the dough with the help of a few spoons, and arrange the cookies on a perforated baking tray (I used the Le Creuset pizza tray ).
  5. Preheat in the oven to 210 ºC and bake for about 10 or 15 minutes, until you notice that the oats have taken on a nice golden hue.
  6. Remove from the oven and let them cool down for a few minutes.
  7. Meanwhile, prepare the topping: place the chocolate and cream in a ramekin and microwave until melted. Mix and you already have the coverage ready. Using a spoon, spoon a little chocolate on top of the coconut cookies.
  8. Decorate them, spreading a little grated coconut on top.

  • For those who are practical, you can easily make both recipes quickly: mix 2 bananas and 180 gr of oats, and when you have a homogeneous mixture, divide it into two parts. One of them is mixed with the chopped chocolate; the other you mix with the flakes and coconut oil. All ready to bake!
  • For the oatmeal and chocolate cookies, before mixing with the banana, I sometimes pass the oats through a pan together with a few tablespoons of honey, so that the oats are well impregnated, somewhat caramelized and obtain brighter and more beautiful cookies.
  • Remember that the cookies are of a similar size and thickness, so that they bake at the same time.
  • If you make the oatmeal and coconut cookies, you can leave some without chocolate coating, so you have a variety of cookies. If you make them, you can decorate with grated coconut to identify that they have coconut.

What idea! How about making the exact same cookies, but instead of bananas , use baked apple or applesauce ? You make the compote, mix it with the oats and bake... if you combine it with a little chocolate or brighten it up with cinnamon, the combination will be completely successful.

They are perfect cookies for breakfast or ideal to accompany a good coffee. You dare?

Hola Isabel, la verdad es que tendrás que hacerlo a ojo, porque depende mucho de las manzanas y de cuánto las ases que se reduzcan más o menos o que acepten más o menos copos de avena.
Te recomiendo asar de 3 a 4 manzanas amarillas golden, maduritas (con 3 creo que bastará), y una vez asadas ir incorporando los copos de avena hasta que quede una mezcla que ya no acepte más (o queden apalmazadas y veas que ya no están pegadizas). Lo verás claramente cuándo las hagas, ya verás :).

Hola Natalia, lo que planteas es ya una receta distinta y se debería probar. De hacerlo, yo entonces añadiría también harina, haría otro tipo de galleta… Me sabe mal pero no te puedo decir más sin probar. Sí las haces me encantará saber tu receta y qué tal quedan. Saludos!
