I assure you there's no easier recipe than this, which you'll have ready in the blink of an eye and you'll love. Honest promise from Claudia!

As you probably know, I'm a big fan of egg recipes. Cooked any way, they taste delicious to me. And this way, made in a pan that treats them gently, like the Pro Le Creuset non-stick frying pan, if I tell you they're finger-licking good I'm not exaggerating. In this simple preparation, each ingredient wonderfully adds to the whole, elevating the final result. How is it possible that something so simple can taste so good?

Ingredients

  • Eggs (1 or 2 per person)
  • Pesto sauce (to taste)*
  • Avocado
  • Goat cheese log
  • Salt
  • Pepper
  • Sesame seeds
  • Bread (1 or 2 slices per person)

*If possible, I recommend you make the pesto sauce at home. But if you can't, look for a good-quality one; it's a key ingredient in the recipe. If you want to make it yourself, here is the basil pesto recipe. You'll also see other options to encourage you to try them.

Preparation

  1. Heat your Pro Le Creuset non-stick frying pan and spread several generous spoonfuls of pesto.
  2. As soon as it's hot, add the eggs and let them set, cooking the whites well with the pesto.
  3. While the eggs cook, cut the avocado, remove the flesh and mash it with a fork.
  4. Toast the slices of bread, place them on the plate and spread the avocado flesh on them.
  5. Crumble the goat cheese on top, distributing it well over the toast.
  6. When the eggs are done, place one on each slice of bread. Don't forget to scoop up some pesto with the spatula too!
  7. Sprinkle the sesame seeds, a little salt and freshly ground pepper.
  8. Enjoy every bite, you'll see how wonderful it is!
