Ingredients

  • 270 g cooked and drained chickpeas
  • 120 g basmati rice
  • 1 onion, finely chopped
  • 1 tablespoon extra virgin olive oil
  • 190 g fresh grated tomato
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon curry powder
  • 1 teaspoon smoked paprika (sweet or hot, whichever you prefer)
  • 1 teaspoon turmeric
  • Salt and freshly ground black pepper (to taste)
  • A few fresh coriander leaves

Method

  1. Heat some water in a saucepan or small pot and, once it comes to the boil, cook the rice, stopping the cooking 2 minutes before the time indicated on the packet.
  2. While the rice is cooking, heat the extra virgin olive oil in your Castel'Pro Cristel stainless steel rounded frying pan. Add the chopped onion and sauté until it starts to turn golden.
  3. Add the grated tomato and stir well so that it combines with the onion.
  4. Add the cooked chickpeas and all the spices. Stir to combine the ingredients and cook over a low heat for about 5 minutes, stirring frequently.
  5. Finally, add the cooked and drained rice. Stir well and cook over a low heat for a further 2–3 minutes.
  6. Turn off the heat and serve, adding a little fresh coriander on top.

Chickpea Curry with Basmati Rice

Ingredientes

  • 270 g of cooked and drained chickpeas

  • 120 g basmati rice

  • 1 finely chopped onion

  • 1 tablespoon extra virgin olive oil

  • 190 g of natural grated tomato

  • 1 teaspoon ground cumin

  • 1 teaspoon ground coriander

  • 1 teaspoon of curry

  • 1 teaspoon smoked paprika (sweet or hot, whichever you prefer)

  • 1 teaspoon of turmeric

  • Salt and freshly ground black pepper (to taste)

  • A few fresh cilantro leaves

Preparación

  1. Calienta agua en un cazo o en una olla pequeña y, cuando hierva, cuece el arroz, deteniendo la cocción 2 minutos antes del tiempo que se indique en el paquete.

  2. Mientras el arroz se cocina, pon a calentar el aceite de oliva virgen extra en tu sartén bombeada de acero inoxidable Castel'Pro Cristel. Añade la cebolla picada y sofríela hasta que empiece a dorarse.
  3. Incorpora el tomate rallado y remueve bien para que se mezcle con la cebolla. 

  4. Añade los garbanzos cocidos y todas las especias. Remueve para integrar los ingredientes y deja que se cocine a fuego suave durante unos 5 minutos, removiendo con frecuencia.

  5. Por último, añade el arroz cocido y escurrido. Remueve bien y cocina a fuego suave durante unos 2-3 minutos más.

  6. Apaga el fuego y sirve, añadiendo un poco de cilantro fresco por encima.
