A few months ago Nordic Ware informed us that the beautiful Beehive mold would stop making it. I couldn't believe it, with how beautiful it is! With it you get some beautiful biscuits, perfect entertainment for breakfast , to accompany coffee or for the children's snack.

I personally love them, not only because of the detail of their shapes, as sweet as they are cheerful, but also because of the size of each cake: they are perfect! They are comfortable to wear, to present, to drink...

So we said: Let's get them before they're gone! And we brought a lot of Beehive molds. That was a few months ago, and we still have some, but we are already on the last batch, and we couldn't stop sharing with you this delicious and easy-to-prepare recipe, before having to say our last goodbyes.

But don't worry! In the absence of that pan, you can make this same recipe in other pans designed for baking, from the mini-muffin pan, to a Nordic Ware bundt pan , with which to prepare a maxi-size cake.

Whatever format you choose, you will see that it is a very simple but successful recipe . I hope you enjoy it!

Cakes prepared in the Nordic Ware Beehive cakelet pan

Ingredients*

  • 1 cup of cornmeal
  • 1 cup pastry flour
  • 1 tablespoon yeast
  • 2/3 cup sugar
  • 1 teaspoon salt
  • 1 ¼ cup milk
  • 3 eggs
  • 4 tablespoons melted butter
  • ¼ cup honey

*For measurements, take a 240 ml measured cup with water.

Preparation

  1. Preheat the oven to 190ºC.
  2. Prepare the Beehive mold with non-stick spray , ensuring that it is well distributed with the help of a kitchen brush.
  3. Sift the flour, and in a bowl mix all the ingredients. If you have the KitchenAid mixer , put all the ingredients in the bowl and mix with the flexible side attachment at medium speed.
  4. Pour half of the batter into the mold , filling each cavity up to three-quarters of its height at most.
  5. Place the mold carefully in the oven, at medium height, and bake for 14-18 minutes at 180ºC. You can check that they are done with the help of the Nordic Ware indicator thermometer , or else with a toothpick: you insert it into the center of the cake and if it comes out clean, it is ready.
  6. Take the mold out of the oven, let it rest for 10 minutes and unmold it, leaving it to finish tempering on a cooling rack .
  7. Repeat baking with the second half of the dough.

Et voila! In a few minutes you will be enjoying these mini-morsels, which, served with a little honey on top, end up not just being sweet for the eyes, but a pleasure for all the senses. Enjoy them!

  • I do not know if you are aware that KitchenAid has launched a new accessory, it is the sieve and ingredient scale . If you have KitchenAid and want to use it, all you have to do is attach the sieve (in fact, I think you'll always have it attached because of how practical it is!) and add the ingredients to it, to weigh them as you introduce them. . The same accessory will allow you to sift the flour while you pour it into the bowl of the machine.

Hola. A qué harina de maíz se refieren? 1. Fécula de maíz, 2. Harina de maíz para polenta, 3. Harina de maíz para arepa. A todas las llaman con el mismo nombre y eso confunde.

Pero si quieres, en lugar de hacerlo en bizcochitos individuales, puedes hacerlo a modo de bizcocho entero. En ese caso, puedes usar cuaquier molde de Emile Henry por ejemplo (el redondo mismo o cualquiera que verás aquí: https://www.claudiaandjulia.com/collections/moldes-ceramicos), o en un molde bundt Nordic Ware (https://www.claudiaandjulia.com/collections/moldes-bundt).
