Today Beatriz, author of To Be Gourmet , brings us a little temptation in the form of a cookie, perfect to accompany coffee, have a mid-morning snack... or satisfy a craving!

I love the entire Nordic Ware baking range. I don't even know the molds I'm accumulating anymore. But when I found out that in addition to bundts, he made cookie stamps, I immediately put them on my list of “essential things to buy”.

The stamps themselves are an absolute cutie. They make you want to have them on the kitchen, as an ornament, in a small bucket in formation. The design is made of aluminum with a wooden handle, and they have a large size. About 8 cm in diameter. So the process of making cookies, one after the other, is more comfortable, simply because it ends much sooner!!!

On the other hand, the designs offered by the brand are ideal. They come in a pack of three models. The flower ones make me crazy; Once in spring I see them beautiful to offer at home. Another of the stamps makes the cookie look like a waffle, with its infinite little squares. And the last of the batch makes some beautiful waves.

There were many possible recipes for cookies to release my Nordic Ware stamps , but I love the butter ones, perhaps because I ate them a lot as a child; my parents always bought them in France and they are a vice; one after another, and without being able to stop.

So I thought that this could be the ideal recipe for this occasion. I have used salted butter, which is another of my weaknesses. Now it is easy to find here, but in France there are still many more varieties.

Ingredients

  • 500g of flour
  • 250 g of pomade salted butter
  • 1 egg
  • 250g of sugar

Preparation

  1. Mix the sugar with the butter and beat. Add the egg and beat again. We add the flour in three times better, so that it integrates little by little. The dough is oily and breaks if stretched too far, but it doesn't stick to your fingers.
  2. Wrap the dough in film and refrigerate it for about 15 minutes. We make small balls and reserve them. We take a ball, we extend it one by one on kitchen paper with the help of a rolling pin. We drive the stamp carefully so that the shape is stamped on the entire surface, if necessary we help ourselves by pressing the aluminum with our fingers.
  3. We take off and with a spatula we transfer the biscuit to a tray. When we have a few, we put them in the fridge for half an hour before baking, so they don't lose their beautiful shape-
  4. We put the oven at 200º and introduce the cookies for about ten minutes in the medium high part, so that they come out golden brown.
  5. As each oven is different, we will control that time by giving it a little more or a little less depending on how the cookies look.
  6. When you take them out they may have a somewhat soft consistency, better not handle them until then because otherwise they will break, but as soon as they cool they harden and are perfect.


Some delicious cookies, ideal to accompany a coffee or tea in the garden and…. prettier impossible!

yo tengo varios sellos de nordic ware , yo tengo un truqui, truqui , para que se estampen muy bien y no se peguen ell primero hago una masa bien consistente y nada pegajosa , se deja un dia reposar y se estampan fenomenal el segundo truqui es poner al sello harina de arroz y sacudir no se pega nada de nada las galletas ya echas las meto un poco al frio antes de hornear …

Yo estiro la masa como si fuera a hacer galletas convencionales. Estampo con el sello y recorto con un molde redondo. Con bolitas se me pegan, así perfecto!

Son una preciosidad, y la receta buenísima. Para que no se peguen yo unto con mantequilla el sello, hago una bolita y la estampo con el sello. Recorto el exceso y al hacerlo sobre una tabla de madera se queda pegada a esta y solo hay que rascarla con una espátula (yo la del pan) y pasarlas a la bandeja del horno. Frío y luego hornear. Están buenísimas

Yo he tenido el mismo problema, y he probado a pintarlos con un poco de mantequilla o aceite, o a expolvorearlos con harina, pero el resultado no es el deseado. Y creo que la cuestión no está tanto en cómo manejar los sellos, sino en la masa de las galletas, porque no todas tienen la misma cantidad de mantequilla (que yo creo que es lo que marca la diferencia).

Precisamente, he hecho estas galletas saladas, y no he tenido absolutamente ningún problema (como sí tuve con las de canela o almendra), refrigerando antes la masa, y en lugar de estirarla con el rodillo y estampar a continuación el sello, hice bolitas que estampé con los sellos directamente sobre la bandeja de hornear, sin mantequilla. Como os digo, han salido perfectas.

Tengo la 3 sellos que me parecen preciosos, pero al estampar la masa con los sellos se me quedan pegados y no logro hacer estas bonitas galletas. Normalmente hago las galletas de mantequilla con la receta de la thermomix y las chafo con cuidado con el tenedor y me quedan muy bonitas
Me podéis ayudar por favor? Me gustaría poder utilizar los sellos y que me queden unas galletas dignas.

Yo tengo estos sellos pero con distinto dibujo.Siempre los espolvoreo con harina antes de cada estampación y en lugar de estirar toda la masa voy cogiendo un poco de cada vez,es decir,primero enfrió bien la masa en la nevera,luego estiro una pequeña cantidad de esta y estampo y así sucesivamente.
