This delicious banana bread includes the freshness and lightness of seasonal strawberries, the sweetness of banana and the super-appetizing whim of white chocolate.

Very moist and with a characteristic banana flavor, banana bread is one of the easiest breads to make, and it has become very common since it is a great way to avoid using large amounts of sugar , since that fruit already provides a great sweetness to the mixture.

There are a wide variety of banana bread recipes, and what they all have in common is that they are baked in tall rectangular moulds and take on that characteristic shape. They are usually leavened with baking powder (not baker's yeast) and, in fact, due to their characteristics they could also be called banana cake .

In today's version, both the banana and the strawberries add a lot of juiciness. It's a fresh cake, and thanks to that it goes down very well, but because of all its load of fruit, eggs and other ingredients, it fills you up with just one piece and you get a lot of use out of it. I hope you enjoy it as much as you do at home!

Banana bread recipe with strawberries and white chocolate

Ingredients

  • 220 gr strawberries
  • 220 gr pastry flour
  • An additional tablespoon of flour (to flour the strawberries)
  • 90 gr brown sugar
  • 1/2 tsp yeast (3 gr)
  • 1 tsp baking soda (5 gr)
  • 1/2 tsp salt
  • 3 ripe bananas
  • 2 XL eggs
  • 70 gr oil
  • 1 tsp vanilla extract
  • 115 gr white chocolate for baking

Preparation

  1. Wash and cut the strawberries, first in half lengthwise and then making several halves of each one, to obtain pieces that are not too big but that keep their shape after baking, and that do not completely fall apart with the heat.
  2. In a bowl, mix the dry ingredients: flour, sugar, baking powder, baking soda and salt.
  3. In another bowl, mash the bananas using the KitchenAid masher and add the eggs, oil and vanilla extract. Mix well with a whisk.
  4. Pour the wet dough (the banana and egg mixture) into the bowl with the dry ingredients and mix well using a ball-tipped whisk.
  5. Add the white chocolate cut into small pieces (chocolate chip size) and the strawberries, and mix well.
  6. Prepare the bowl (in my case the 32cm Le Creuset ceramic terrine ) by applying butter or release spray . Pour the mixture into the mould.
  7. Place the mould in the oven, preheated to 200ºC, and bake with the lid on for 20 minutes at 200ºC and then for a further 15 minutes at 180ºC.

Grades

  • To bake the cake I used a terrine because, thanks to its lid and narrow width, the heat penetrates quickly into the dough and it cooks quickly. But you can use any tall, rectangular mould.
  • It is worth flouring the strawberries before adding them to the mixture. This will help prevent them from sinking to the bottom during baking and will prevent the batter from clumping around them.
  • Strawberries and white chocolate are made for each other, but they are also delicious with dark chocolate. And they also go perfectly with banana, so you can replace white chocolate with dark chocolate and it will be delicious, with a more intense flavour and contrast.
  • You can use chocolate chips, but remember that you can always use melting chocolate bars instead and chop it up like I did. This way you are more aware of the amount of chocolate you are using and it is more cost effective.
  • If you want to vary the recipe, you can also make it simply using banana and dark chocolate, you will see how delicious it is.

Por supuesto, puedes usar cualquier molde alto y rectangular. Si no dispone de tapa, puedes utilizar papel de horno para cubrir la masa durante el horneado.
