Let's make coconut ice cream. Just like always, I bring you the recipe for an easy, quick coconut ice cream with a coconut flavour, which is what we lovers of this fruit fallen from the sky (well, from tropical palm trees, but from the sky all the same) are looking for.
To make traditional coconut ice cream we will only need:
- A saucepan to heat the initial mixture
- Let the mixture rest for a few hours so that it takes on the coconut flavour and the mixture cools before churning it.
- An ice cream maker: you have some very affordable options for ice cream makers without a compressor (to make ice cream on the spot) in our ice cream and yogurt makers section , others that are more expensive with a compressor to make homemade ice cream in quantity (the Magimix ice cream maker , the star in France), or you can use one of the star accessories of the KitchenAid robot, the brand's ice cream maker accessory .
The mixture will be very simple, because as I said we will be making coconut ice cream. Nothing more, nothing less. So you only need coconut milk, cooking cream, sugar and grated coconut. And you will see how delicious it is!
Ingredients
- 500 ml coconut milk
- 200 ml of cooking cream (35% mg)
- 180 gr of sugar
- 45 gr of coconut flakes
Preparation
- In a saucepan, add the coconut milk, cooking cream and sugar. Heat on low/medium heat and stir until the mixture is hot (without boiling) and the sugar dissolves.
- Reduce the heat and, while stirring, add the coconut flakes.
- Let it cool, and store it covered in a container or bowl in the refrigerator for a few hours (minimum 3 hours).
- After that time, remove it from the refrigerator, stir the mixture and prepare the KitchenAid accessory in the robot (if you are going to make it in the KitchenAid robot), or prepare the ice cream maker in which you will make the ice cream.
- Turn on the ice cream maker and, with the blades running, start pouring the mixture inside, using the KitchenAid at power 2/4. Let it run until the ice cream is churned (about 18 or 20 minutes).
- You can enjoy it immediately if you like it creamy and slightly melted, or store it in an airtight container or the Revol mold with lid in the freezer to consume after a few hours, when it will have completely frozen.
- When serving, sprinkle some grated coconut flakes on top. The success will be total if you pour melted dark chocolate on top... Mmmmh!
Grades
- Remember that if you make the ice cream with the KitchenAid accessory, or in an ice cream maker without a compressor, the accessory must have been in the freezer for a minimum of 24 hours, so that its interior liquid freezes enough to stay cold for the entire time it takes to churn the ice cream.
- Note! If you use the KitchenAid ice cream maker, it is very important to turn on the robot first, before you start pouring the mixture - otherwise the mixture will crystallize when it touches the ice cream maker and will not churn properly. First, turn on the robot so that the paddle starts to spin, and while it is running, add the mixture.
- When serving, you can serve it with a little strawberry or raspberry syrup, or pour caramel on top. You will definitely be right with dark chocolate.
