Often the simplest things are the most surprising, and these roasted fig toasts with cream cheese and honey are a perfect example: few ingredients, very easy steps, and a result that tastes like a restaurant dish.

The contrast is what makes them irresistible: rustic, crunchy bread, soft cheese that adds creaminess, fresh figs that become even sweeter when baked, and that final touch of honey and pine nuts that completes each bite. All of this in under 20 minutes and with no fuss.

I like to serve them as an appetizer when I have guests, because they surprise and always earn a “these are so good.” But they’re also an ideal quick dinner, one of those you make in no time and savor slowly, accompanied by a fresh salad or a glass of wine.

NOTE: In peach season, make the same toasts swapping the star ingredient.

Ingredients (for 4 toasts)

  • 4 slices of rustic or sourdough bread
  • 4 fresh figs
  • 100 g cream cheese (like ricotta, mild goat cheese, or mascarpone)
  • 1 tablespoon honey
  • 1 handful pine nuts
  • Fresh thyme or mint leaves for garnish
  • Salt and pepper to taste
  • A drizzle of extra virgin olive oil

Preparation

  1. Preheat the oven to 180°C.
  2. Prepare the figs: Make a cross cut on the top of each fig without cutting all the way to the base, so they open slightly.
  3. Toast the bread in the oven or in a skillet with a little oil until golden and crispy.
  4. Toast the pine nuts for a few minutes in a pan without oil.
  5. Bake the figs: Place them on a tray, add a drizzle of honey on top and bake for 10 minutes, until tender (you’ll also see them change color slightly).
  6. Assemble the toasts: Spread each slice with a generous layer of cream cheese, place a roasted fig on top, and sprinkle with the toasted pine nuts.
  7. Garnish with a little more honey, fresh herbs and a pinch of salt and pepper.
    Serve immediately and enjoy this sweet and savory delight.
