This Riojan skewer of red shrimp and mushrooms with pesto It is a very easy and effective dish, and what I love is the basil pesto that accompanies it to give it that special touch, because it is a pesto that you will use to accompany salads, meats and fish when you need something special.
Believe me, it will take you just a few minutes to make, and that's why I strongly encourage you to try it - with so little effort but such a delicious result, it will become a classic among your friends and family this summer. We made it on the WMF Lono Master Grill electric grill this time, thinking of cooking it outdoors, but you can do it on your grill or barbecue.

Ingredients
- 12 large mushrooms, cleaned, whole and without stems
- 12 large peeled shrimp, gutted
- 1 clove of peeled garlic
- 2 bunches of parsley leaves
- 1/2 glass of extra virgin olive oil
- Maldon Salt
Preparation
- To make the pesto, simply put the garlic, parsley and oil into the WMF chopper bowl and blend everything well for a few seconds by pressing the Power 2 button, and you will see that you immediately have the pesto.
- Prepare the mushrooms by removing the stem and drizzle with a splash of oil.
- Dry the prawns on kitchen paper and oil them as well.
- Place the mushrooms on the WMF Lono Master Grill , allow them to brown on the bottom and then on top. Remove and set aside.
- Arrange the shrimp tails on the hot WMF Lono Master Grill and brown on both sides, add the mushrooms again and sauté, pouring in a couple of tablespoons of the parsley pesto.
- Serve immediately by skewering each shrimp and mushroom with a toothpick.
