This Riojan skewer of red shrimp and mushroom with pesto It is a very easy and successful dish, and what I adore is the basil pesto with which it is accompanied to give it that special touch, because it is a pesto that you will use to accompany salads, meat and fish when you require something special.

Believe me, it will only take you a few minutes to make it, and for this reason I strongly encourage you to try it - with such little effort but such a rich result, it will become a classic among your friends and family this summer. We do it on the WMF Lono Master Grill electric grill this time, thinking of cooking it outdoors, but you can do it on your grill or barbecue.

What I like the most about doing it in the Master Grill is that it allows us to cook directly at the table and it goes very well for lunch or dinner outdoors, logically ideal at this time of year.

As for the pesto , we do it in the new WMF chopper , which has been quite a discovery: despite being compact, its base offers a lot of capacity, it is very easy to use and is very practical.

Ingredients

  • 12 large mushrooms, clean, whole and stemless
  • 12 large peeled prawns, gutted
  • 1 peeled garlic clove
  • 2 bunches of parsley leaves
  • 1/2 glass of extra virgin olive oil
  • salt maldon

Preparation

  1. To make the pesto, simply put the garlic, parsley and oil in the container for the WMF chopper and grind everything well for a few seconds by pressing the Power 2 button, and you will see that you instantly obtain the pesto.
  2. Prepare the mushrooms by removing the stem, spray them with a jet of oil.
  3. Dry the prawns on kitchen paper and oil them too.
  4. Put the mushrooms on the Lono Master Grill WMF griddle , let them brown on the bottom and then on the top. Withdraw and reserve separately.
  5. Distribute the shrimp tails on the hot Lono Master Grill WMF griddle and brown on both sides, add the mushrooms again and sauté, pouring a couple of tablespoons of the parsley pesto.
  6. Serve immediately by poking each prawn with its mushroom with a toothpick.
