I bring you a very tasty and sweet recipe to make at home. It's a batch of honey and vanilla mini cakes. It's an ideal recipe to prepare with the little ones at home. You can make it for a birthday party or for an afternoon snack, and those who love sweets will surely join in!
We made these cakes using the Frozen mold, since it's perfect for giving them a more special touch, but if you want you can make them with the same batter in other molds to obtain different shapes and sizes. They're sure to love them! And if not, you'll tell me...
Ingredients
- 133 g unsalted butter at room temperature
- 200 g white sugar
- 100 g honey
- 1/2 cc of vanilla extract
- 2 large eggs
- 237 ml warm water
- 400 g all-purpose flour
- 1/2 cc salt
Preparation
- Preheat the oven to 175ºC. Prepare the Frozen cake mold Nordic Ware with non-stick spray and spread it with a pastry brush.
- Use a mixer to cream the butter and sugar. Add and blend the honey and vanilla.
- In a small bowl, mix the flour with the salt. Stir the egg and flour mixture and add it to the butter mixture until everything is incorporated. Avoid overmixing to prevent bubbles from forming.
- Fill each cavity of the mold with batter and gently tap the tray to release any bubbles that may have formed inside the batter.
- Bake for 20 to 25 minutes or until the edges are lightly golden and the centers of the cupcakes are firm to the touch.
- Invert the cupcakes to turn them out onto a cooling rack so they can cool and retain their texture.
- Clean the pan and repeat with the remaining batter.
