Can you imagine enjoying the taste of traditional crema catalana in a homemade, refreshing ice cream? Well with the heladera Ninja it's super easy. This crema catalana ice cream blends the smooth, rich texture of crema catalana with the freshness of ice cream, creating an incredible dessert the whole family will love.
Follow my step-by-step recipe and you'll see how simple it is to make this delicious dessert at home. I promise you don't need to be a professional chef to pull it off. Plus, it's a fun and tasty way to surprise everyone with something different.
So put on your apron, take out your heladera Ninja and get ready to enjoy an ice cream that will remind you of classic flavors, but with a modern, refreshing twist. You'll be amazed at how delicious it turns out! Let's get to it!
Ingredients
- 400 ml whole milk
- 1 vanilla pod
- 3 egg yolks
- 125 g sugar (75 g for the ice cream base + 50 for the caramel)
- 15g cornstarch
Preparation
- Cut the vanilla pod in half lengthwise and scrape out the seeds.
- Pour the milk into a medium saucepan, add the vanilla pod and seeds and bring to a boil over medium heat. When it starts to boil, remove from the heat, cover and let infuse for 15 minutes.
- Meanwhile, whisk the egg yolks, 75 g of sugar and the cornstarch in a medium bowl.
- Heat in a saucepan over low heat. When it's about to boil, use a slotted spoon to remove the vanilla pod. While whisking, pour the hot milk mixture into the egg yolk mixture.
- Pour the mixture back into the saucepan and bring to a boil over medium-high heat, whisking constantly until the mixture thickens.
- Pour the mixture into a container and place it in an ice bath to cool.
- Once cooled, cover and let rest for 24 hours.
- The next day, prepare a caramel to mix in. Line a baking tray with parchment paper. Put 50 g of sugar in a small saucepan and cook over medium heat, without stirring, until the sugar becomes a golden liquid caramel. Pour the hot caramel onto the lined tray to cool. Once completely cooled, break the hard caramel into small pieces.
- Remove the container from the freezer and place it in the outer jar-shaped bowl without the lid. Install the whisk attachment on the lid of the outer bowl. Place everything on the base of the heladera Ninja Creami and turn the handle to the right to raise the platform and lock it in place (until you hear a click).
- Select the ICE CREAM program.
- Once processing is finished, use a spoon to create a hole about 4 cm wide that reaches the bottom of the container. Add the caramel pieces into the hole* and reprocess the mixture using the +EXTRAS program.
- *It's okay if it exceeds the MAX FILL line (Maximum fill).
- Once processing is finished, remove the ice cream from the container and serve immediately.
Serve with salted caramel on top, or alongside a scoop of whipped cream or milk meringue ice cream — I can vouch that it's a delicious combination, here's an example:
