Tuna Tataki has become very popular and is a great recipe to make at home. Today I will tell you how to make marinated tataki at home, that more than a recipe, tataki is a cooking technique or way of preparing fish and meat, very easy to learn and that you can apply to different fish and with your favorite sauces.

We are going to see some tricks to make tataki at home and some things that will be of interest to you to carry it out, and then I leave you a recipe for tataki marinated with soy that I hope you like as much as I do.

what is tataki

The word tataki is a way of preparing meat or fish in Asian cuisine. It basically consists of marinating the food and cooking it, leaving it practically raw inside (unlike the sashimi technique, in which the food is completely raw).

You can apply the tataki technique on tuna, bonito, salmon, as well as meat or vegetables (not chicken), and use different marinades as well as batters.

  • The most common is to prepare soy sauce-based marinades, which are mixed with ginger, orange or lemon juice, etc. But you could also marinate it with olive oil and spices.
  • The pieces are covered in seeds. The most common is to coat them with soy, but you can apply a mixture with flax or chia seeds, or coat them with chopped nuts that will add a lot of flavor.

Things to keep in mind when making tataki

  • Choose the loin: To make a tataki, the best piece is always the loin, whether it is fish or meat.
  • Choose fresh product, and remember that the color will be important: when cooking it will lose intensity, but the more color it has to start with, the more it will have when serving it. And we want a presentation ten!
  • We are talking about making fish practically raw, so it is highly recommended to freeze it 48 hours before cooking.
  • Cooking has to be very fast, in a very hot pan and with little oil (we want to seal it, not fry it). Since you want the heat to be very strong, do it in an iron skillet (remember that high heat in a non-stick skillet is not convenient).
  • After marinating, remember to save the liquid to pour on top of the tataki if you want to serve it as is (you will dip bread!). It can also be used as a sauce, as a dressing for a green salad, rice or pasta with which to serve the tataki.

Step by step to make tataki

As we have said before, tataki is a technique, not a recipe itself, and you can apply it to salmon, vegetables, meat... So, in general and to use in your chosen foods, you can make tataki following this Step by Step:

  1. Freeze the fish for 48 hours, and let it thaw in the fridge before preparing it (don't use the microwave for this, you could cook it).
  2. Prepare the marinade and introduce the fish loin or the food that you are going to make in tataki). Leave it marinating for two to four hours. Reserve the marinade.
  3. Coat the marinated pieces in sesame seeds, or in the mixture of seeds or nuts that you have prepared (sesame and chia, chopped hazelnuts...).
  4. Put a skillet or iron griddle on the fire and heat it over high heat. When it is very hot and with hardly any oil, seal the piece (applying it whole, without cutting), passing all the sides for just 15 seconds.
  5. Remove it from the pan and wait for the piece to lose heat.
  6. Fillet the piece into pieces just one centimeter thick and with some diagonal, with a very sharp knife.

Red tuna tataki recipe with sesame

Ingredients

  • 400 g of fresh red tuna loin
  • 100ml soy sauce
  • 50 ml of rice vinegar
  • 1 tbsp toasted sesame seeds
  • powdered ginger
  • Salt

Preparation

  1. Prepare the mash: In a bowl, mix the rice vinegar with the soy sauce. Add to the mixture a teaspoon of ginger powder and a pinch of salt. Mix.
  2. Cut the tuna loin with a knife on top of the WMF wooden board into two strips about 5 cm wide and put them in the bowl, covering them with the marinade. Let them rest for about 2 hours in the fridge (turn them around once in a while).
  3. In a frying pan, toast the seeds for a few minutes if you bought them raw (this step is not necessary if you already have them toasted).
  4. After the marinating time has elapsed, pour the toasted sesame seeds on a plate or on a board, and pass over the tuna loins, making the seeds stick well to the loin.
  5. Heat a skillet or iron grill over high heat, cook the two tuna loins on all sides for about 15 seconds.
  6. Remove from the pan and let cool.
  7. Fillet the pieces as you would to serve sashimi (horizontally, in slices of approximately one centimeter and with a sharp knife). You already have your tuna tataki ready!

Grades

You can accompany the Tataki in many ways. Just like pouring a few tablespoons of the macerate on top, or I particularly love it accompanied by a colorful salad, which with the soy sauce and the Tataki is phenomenal.
