I bring you some banana pancakes - not with banana, but with banana! -. Since I saw them being made, I loved the idea of ​​giving that characteristic and sweet banana flavor to the pancake batter itself, also made with oats. Healthy and sugar-free, these are pancakes that you can make in a moment and with only 3 ingredients . It's a really delicious breakfast!

I'd love for you to discover it, I think it's a great way to make pancakes . To do this, you'll only need a food processor or chopper to make the banana puree and mix it with the flour and eggs, then put it in the pan. And that's it!

I strongly encourage you to try it at home, and I suggest several toppings to accompany it below.

Preparation

  1. Place the oat flakes in a food processor or chopper (we used the Magimix food processor ) and grind until they become flour.
  2. Put the bananas in large pieces and the eggs in the food processor and blend again until you have a uniform dough, with all the ingredients well integrated. Now you have the pancake batter ready.
  3. Prepare the Mineral B Brunchtime cast iron skillet or cast iron pan with a thin layer of butter. You can also choose to use a non-stick pan and avoid the butter film.
  4. When the pan is hot, add a ladle of batter and let it cook until you see bubbles on the surface.
  5. Flip the pancake and cook the other side.
  6. Serve your pancakes with your favorite accompaniments.

Suggestions to accompany your pancakes:

These pancakes are already sweet enough thanks to the banana. So you can simply top them with some fresh blackberries and a few fresh blueberries. It's also the season for mandarin oranges, so you can also top these pancakes with some slices.

If you want to add a touch more sweetness, spread a little agave syrup or honey on top... Or liquid chocolate, the truth is that it goes phenomenally with banana.

If you want a more delicious option, place a few ounces of chocolate between the pancakes. You will see how they melt and have a fabulous flavour.

If you prefer to accompany them with salty flavours, you can do so too. But it's better to look for contrast... Iberian ham, bacon sautéed in a pan, strong cheeses... You'll enjoy these combinations too.
