I assure you, there’s no simpler recipe, and today I’ll show you step by step and in a video how to make marinated beef carpaccio with rocket and Parmesan at home. You’ll have it ready in no time, and its flavour will delight you. Plus, it’s a fantastic idea to bring to the table when no one expects it. A homemade carpaccio that's ideal as a starter for special occasions or as a complete second course for everyday meals.
The most important thing, as I always say, is to choose quality ingredients. In this recipe, the meat plays the main role, and you should choose a piece with little fat. The fillet is undoubtedly the best cut, but if you go to your trusted butcher, they’ll surely find you a good lean cut with excellent flavour and a better price.

Ingredients for 4 people
- One beef fillet* (or sirloin/topside, but it must be lean and fat-free)
- Rocket leaves
- Juice of half a lemon
- 1/2 small glass of apple cider vinegar
- Flaky salt
- Parmesan cheese
- Extra virgin olive oil
*To calculate the amount of meat you need, allow approximately 100 g per person.

Preparation
- Slice the beef fillet as thinly as possible. If the meat is very cold, it will be easier. You can place it in the freezer for twenty minutes beforehand to firm it up. Use your well-sharpened Classic Line WMF knife.
- Place the slices between two sheets of cling film and pound them with a meat tenderiser to flatten and soften the fibres; they should be very thin. You can also use a rolling pin or a heavy frying pan.
- Arrange the slices on a plate, pour a spoonful of olive oil over each one and spread it evenly using a pastry brush. Alternatively, brush the oil onto the plate before placing the meat slices.
- Prepare the marinade by mixing half a glass of vinegar, the juice of half a lemon, and a splash of olive oil in a bowl. Whisk to emulsify and gently mix in the rocket to coat it well.
- Place the marinated rocket on top of the meat and season with a few flakes of salt and freshly grated Parmesan cheese.
Suggestions
- To give it a different touch, you can drizzle some honey over the rocket or spread a bit of pesto sauce over the beef.
- You can also sprinkle some pine nuts or chopped toasted hazelnuts on top. The crunch adds a wonderful twist to your homemade carpaccio.
- If the meat is semi-frozen, you can use a meat slicer instead of a knife to cut the slices.
