Let me share these banana pancakes with you – delicious and sugar-free! These pancakes are made with banana (which naturally sweetens the batter and eliminates the need for added sugar) and oats, making them healthy, quick and easy to prepare!

Ever since I saw them made, I loved the idea of adding that distinct sweet banana flavour straight into the batter, made with oats too. Healthy and sugar-free, these pancakes are ready in no time with just 3 ingredients. A truly delightful breakfast!

I’d love for you to try it – I think it’s a brilliant way to make pancakes. All you need is a blender or food processor to purée the banana and mix it with the flour and eggs, then cook it in a pan. And you're done!

I strongly encourage you to try this at home – and below I’ve included a few topping suggestions.

Ingredients

  • 2 ripe bananas
  • 2 large eggs
  • 6 tablespoons rolled oats (or oat flour)
  • (optional) 1 teaspoon vanilla extract

Preparation

  1. Place the oats in a food processor (we used the Magimix Food Processor) and grind into flour.
  2. Add the roughly chopped bananas and eggs to the processor and blend again until smooth and fully combined. Your batter is ready.
  3. Heat your Mineral B iron pan or any iron skillet with a little butter, or opt for a non-stick pan without butter.
  4. Once the pan is hot, pour in a ladle of batter and cook until bubbles form on the surface.
  5. Flip the pancake and cook the other side.
  6. Serve with your favourite toppings.

Topping suggestions:

These pancakes are naturally sweet thanks to the banana. You can simply top them with fresh blackberries and blueberries. Mandarins are also in season and make a lovely addition.

For extra sweetness, drizzle some agave syrup or honey on top… Or even liquid chocolate – it pairs wonderfully with banana.

For a more indulgent treat, place pieces of chocolate between the pancakes – they’ll melt and taste incredible.

If you prefer a savoury contrast, go for it! Iberico ham, sautéed bacon, strong cheeses... these combinations are also delicious.

  • If you'd rather not use oil, opt for a non-stick pan instead of an iron one.
  • To get the perfect pancake shape, the De Buyer Brunchtime Set is very helpful.
  • I don’t add sugar to the mix – if you use two ripe bananas, they provide enough sweetness. But if you prefer, feel free to add a little sugar.
  • To make the flour and batter, we used the Magimix Food Processor, but you'll find other options here – just make sure they grind finely and are large enough for the mix.
