Crepe batter is easy to make, so they can be either a great snack or the perfect breakfast to enjoy with the family. You’ll see that these, with the blueberry spiral, are just as simple to make.

Here is the recipe for blueberry swirl crepes, perfect for impressing!

Ingredients

  • 250 g flour
  • 500 ml milk
  • 3 eggs
  • 50 g unsalted butter
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 pinch of salt
  • 75 g blueberry jam
  • Oil/butter for the crepe pan

Preparation

  1. In a bowl, sift the flour and add the salt and sugar.
  2. Add the eggs and the vanilla extract and mix everything with a whisk.
  3. Gradually add the milk and continue whisking until you have a smooth batter. Finally, add the melted butter.
  4. Let the batter rest in the refrigerator for one hour.
  5. Divide the batter into two bowls. In one place ⅔ of the batter and in the other bowl the remaining third.
  6. In the bowl with the smaller amount of batter, add the blueberry jam and mix everything very well to fully incorporate the jam. Strain this blueberry batter with a fine sieve and place it in a dropper, a squeeze bottle or a soft bottle with a fine tip. You can also use a dispensing funnel.
  7. Grease the crepe pan de Buyer and heat it over medium heat.
  8. When it’s hot, add a little blueberry batter to the pan forming a spiral. Heat the batter for a few moments and then pour a ladle of the plain batter, covering the swirl.
  9. Cook on both sides and when done, remove the crepe from the pan.
  10. Repeat the process until the batter is used up. Enjoy your delicious crepes!

NOTES

  • You can use any jam, although crepes always look prettier if you use strawberry, mixed berry, raspberry, etc., since the contrast between the batter colors is more noticeable.
  • You can make pancakes instead of crepes; although smaller, they will also look very pretty.
