With the season for dining outdoors and enjoying delicious appetizers upon us, it's an ideal time to make country pâté at home, this time made in a mini-casserole.
Making it isn't complicated — it's a matter of mixing a few basic ingredients and baking them in a bain-marie. What is important is to use quality ingredients, and to season and flavor carefully to ensure it absorbs taste.

Set of 4 mini cocottes Le Creuset
Ingredients (for 6-8 people)
- 180 g minced beef
- 180 g pork sausage meat
- 160 g chicken livers
- 1 garlic clove
- ½ onion
- 1 egg
- 50 g raw shelled pistachios
- 1 tablespoon butter
- 50 ml brandy
- Salt
- Pepper
- Seasonal fruit to accompany
Ingredients
- We put the different meats in a bowl, and season them with salt and pepper.
- We add the garlic very chopped and the brandy. Let rest in a cool place for at least two hours.
- Peel the onion, chop it and sauté it in a pan or a Shallow Casserole (the Balti Dishi may be ideal for this) with the butter 3-4 minutes. Add the livers and cook 2 more minutes. Purée everything together and add it to the previous mixture, along with the pistachios and the egg.
- Mix well until homogenous, fill 4 mini cocottes.
- Cover them and bake in a bain-marie in an oven preheated to 180ºC for 40-45 minutes.
- Let cool slightly without the lid and refrigerate for at least 24 hours before consuming. Serve with toasts and seasonal fruit.
