I love raisin bread, and I couldn't resist having a recipe that turns out great in the bread maker, because it makes breakfasts or mid-morning/afternoon snacks so easy. I wanted a well-stuffed-with-raisins bread, with a crispy crust, the kind that crackles when you press it (yes, even though it's made in a bread maker) and dense, and this recipe meets all those requirements.

Like so many other bread maker recipes, it's extremely easy to make: put all the ingredients in the pan and start the machine, with only one exception: the raisins should be added 20 minutes after the bread maker is turned on.

That easy, yes. If you're looking for a different, slightly sweet bread without fuss, or something to solve a breakfast or snack, this is your bread.

Ingredients

  • 265 ml of water
  • 1/2 tbsp sugar
  • 1 tbsp salt
  • 200 g bread flour
  • 80 g buckwheat flour (if unavailable, use rye flour or substitute with bread flour)
  • 75 gr wheat flour (standard)
  • 1 packet (5.5 g) dry baker's yeast
  • 75 gr raisins

Preparation

  1. Put the water, sugar, salt and all the flours into the bread pan in that order. Sprinkle the dry yeast on top.
  2. Place the pan in the Moulinex bread maker and program:
    • Program 4 (basic bread)
    • 750 g loaf weight
    • Crust setting: light crust (the resulting loaf is a little under 750 g, and despite programming "light crust" it bakes to a medium crust level).
3. Turn the machine on so it begins to knead. After 20 minutes from the start of the program, a "beep" will sound. At that moment lift the bread maker lid and add the 75 or 80 g of raisins. Close the lid; you'll see the bread maker continue kneading, with later pauses to rest and rise, and finally it will finish with the baking.
4. When the program ends, remove the pan from the bread maker and let it cool slightly, then turn the loaf out onto a bread board.
Slice and serve, plain or with a bit of butter or chocolate, or with ham or cheeses. Whether sweet or savory, it's a delicious bread.

Notes

  • Raisin bread is delicious on its own, or to enjoy with contrasts: I love it spread well with tomato, drizzled with good olive oil and sprinkled with flaky salt, then accompanied by serrano ham or cheese.
  • Remember that grapes are great companions to cheese, so this bread sliced and toasted will be fabulous on the table next to a good cheese board.
  • It's a bread I love toasted; I think it adds even more.
  • When I want it sweet, I love it toasted, with oil and salt and served with dark chocolate - you have a delicious breakfast or snack solved!
