I bring you a delicious breakfast: roasted banana with honey. Served in a bowl and accompanied by Greek yogurt and granola, with a nice touch of coconut and cinnamon, they are delicious.
The only thing you'll have to consider is how much of each topping you want (in the ingredients list I leave several ideas, but think about what other ingredients you would like to combine with the roasted banana), but these roasted bananas become addictive and make for a sweet yet energizing breakfast free of added sugars (or at least free up to the point you decide not to add anything beyond the banana's own sweetness).

Ingredients
- 2-3 medium bananas
- 1-2 tbsp honey (to taste)
- 1-2 tsp cinnamon (to taste)
- 1-2 tbsp brown sugar or panela (optional, but if you want them more caramelized and with that cane sugar aroma, add it)
- Granola
- Vanilla Greek yogurt*
Others: you can accompany the bowl with other ingredients of your choice, like coconut flakes, chocolate chips, panela, melted chocolate, nut butter, roasted (or fresh) strawberries, raspberries or blueberries...
You can also replace the Greek yogurt with ice cream (vanilla, coconut or yogurt ice cream—paired with roasted banana it's delicious).
Preparation
How to make roasted bananas
- Preheat the oven to 180 degrees.
- Peel the bananas and cut them crosswise in half. Place them on a baking tray (I used the Bandeja Naturals Collection de Nordic Ware).
- Pour the honey over the bananas and sprinkle cinnamon to taste, and the brown sugar or panela if you want.
- Bake for 8-10 minutes or until roasted (in the last 2 minutes, switch to the broil/grill function so they take on a more golden color).
*It's up to you to roast them with more or less sugar, and the oven will help them roast. The banana is already sweet on its own, but brown sugar will give you a higher degree of caramelization, besides adding that rustic cane sugar note to the roasted banana.

Preparing the breakfast bowl
- In a bowl, arrange a base of Greek yogurt and add the roasted bananas. Add granola, and the other toppings to your taste, such as chocolate chips, coconut flakes (shaved or powdered) and cinnamon, another fruit, cereal, some panela...
- Serve immediately — you'll see what a great way to start the day!
