One of my cocottes favorites, the one I always use on special occasions, is the casserole Le Creuset Doufeu. The origin of its name is a lovely combination of the French terms "doux" and "feu" which mean "soft" and "fire". According to documentation from the brand itself, it was patented by Le Creuset in 1934.
The main difference from the rest of the Le Creuset cocottes is that the lid is designed so you can put ice on it during cooking. By cooling the lid, the steam from inside, the steam from the cooking itself, condenses and returns to the food as a rain thanks to small "nubs" on the underside of the lid. This causes the food to be constantly bathed in its own juices, and everything turns out more tender and even more flavorful.
It's an casserole exceptional [cookware], capable of preparing recipes incredibly good, which unfortunately doesn't get much attention since it isn't as appealing as its popular sisters with the "regular" lid: it's more expensive, doesn't have as attractive a design, and is considerably heavier because more iron is used to build the lid. That's the first impression, but if we get past these prejudices, the truth is that people who own it are impressed.
We have had the chance to compare some stews cooked in a casserole normal and a doufeu with ice and we've really always achieved tenderer, juicier meats in the casserole doufeu. It's a very efficient process that achieves a continuous flow of juices inside the casserole intensifying the flavors especially in slow cooking. As one of Le Creuset's classic ads says, Le Creuset, time is one of the most important ingredients in cooking.

yo la herede de mi abuela , bastantes ollas de esta prestigiosa marca , la verdad cuando guisas en ellas es superior su sabor y jugosidad en las carnes ni punto de comparacion y dofeu es increible la carne sale en su propio jugo la verdad las recomiendo se gana tiempo y dinero , son para toda la vida
